Main Ingredients- Raw Salmon 200g
- 1/4 Onion
- 3 Chili Peppers (adjust to your spice preference, e.g., Korean green chilies or red chilies)
- 1 Egg Yolk (for garnish, optional)
- A little Sesame Oil
- A sprinkle of Toasted Sesame Seeds
Marinade Sauce- 2 Tbsp Soy Sauce
- 1.5 Tbsp Sugar
- 100ml Water
- 2/3 Tbsp Soju or Cooking Sake (to remove fishy odor)
- 1 Tbsp Mirin (or Sweet Rice Wine)

Cooking Instructions
Step 1
Prepare 200g of fresh raw salmon. If you purchased a whole piece, pat it dry with paper towels.
Step 2
Cut the salmon into bite-sized pieces or pieces suitable for topping rice. It’s best to remove any bones or skin at this stage.
Step 3
Time to make the soy marinade. In a bowl, combine 2 Tbsp soy sauce, 1.5 Tbsp sugar, 100ml water, 2/3 Tbsp soju or cooking sake for odor removal, and 1 Tbsp mirin. Stir until the sugar is dissolved.
Step 4
Pour the prepared soy sauce mixture into a pot and bring it to a boil over high heat. Once it boils, reduce the heat to low and simmer for another 1-2 minutes to evaporate the alcohol.
Step 5
The cooked soy sauce needs to cool completely. Pouring it hot over the salmon will cook it, so transfer it to a wide dish or place it in a cool spot (like a balcony) to let it cool down thoroughly.

Thinly slice the onion into strips. Finely chop or thinly slice the chili peppers. If you prefer it spicier, feel free to increase the amount of chili peppers.

Add the sliced onions and chopped chili peppers to the completely cooled soy sauce and gently mix them in.

Prepare an airtight container or food storage box. Place the cut salmon pieces at the bottom.

Pour the soy sauce mixture with onions and peppers over the salmon, ensuring the salmon is fully submerged. Close the lid tightly and refrigerate for at least 3 hours. Marinating overnight will result in an even richer flavor.
Step 10
After the marinating time, take out the well-marinated salmon. Serve it in a bowl, perhaps over rice. For an even more appetizing salmon donburi, top with the egg yolk, a drizzle of sesame oil, and a sprinkle of toasted sesame seeds!
