  • 1/4 Onion
  • 3 Chili Peppers (adjust to your spice preference, e.g., Korean green chilies or red chilies)
  • 1 Egg Yolk (for garnish, optional)
  • A little Sesame Oil
  • A sprinkle of Toasted Sesame Seeds

Marinade Sauce

  • 2 Tbsp Soy Sauce
  • 1.5 Tbsp Sugar
  • 100ml Water
  • 2/3 Tbsp Soju or Cooking Sake (to remove fishy odor)
  • 1 Tbsp Mirin (or Sweet Rice Wine)

Cooking Instructions

Prepare 200g of fresh raw salmon. If you purchased a whole piece, pat it dry with paper towels.

Cut the salmon into bite-sized pieces or pieces suitable for topping rice. It’s best to remove any bones or skin at this stage.

Time to make the soy marinade. In a bowl, combine 2 Tbsp soy sauce, 1.5 Tbsp sugar, 100ml water, 2/3 Tbsp soju or cooking sake for odor removal, and 1 Tbsp mirin. Stir until the sugar is dissolved.

Pour the prepared soy sauce mixture into a pot and bring it to a boil over high heat. Once it boils, reduce the heat to low and simmer for another 1-2 minutes to evaporate the alcohol.
