Main Ingredients

  • 4 Scallops (fresh ones are best)
  • 2 Tbsp Butter (for rich flavor)
  • 1/2 Tbsp Minced Garlic (enhances the scallop’s natural sweetness)

Sauce Ingredients

  • 1 Tbsp Soy Sauce (for umami)
  • 1 Tbsp Oligosaccharide (for glaze and sweetness)
  • 1 Tbsp Mirin (or cooking sake, to remove any fishy smell)
  • A pinch of Black Pepper (to taste)

Cooking Instructions

Step 1

If using frozen scallops, thaw them completely and pat them thoroughly dry with paper towels. If the scallops are large, you can cut them in half. Score the top surface of the scallops in a crisscross pattern about 1cm apart. This helps the sauce penetrate and makes them look beautiful when cooked.

Step 1

Step 2

Melt 2 tablespoons of butter in a preheated pan over medium heat. Once the butter is melted, add 1/2 tablespoon of minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic!

Step 2

Step 3

Place the prepared scallops onto the pan with the garlic butter. Arrange them with the scored side facing up. Sear over medium-low heat for about 2-3 minutes per side, until golden brown and nicely caramelized. Cooking them thoroughly until the edges turn golden will ensure a wonderfully chewy texture.

Step 3

Step 4

Once the scallops are partially cooked, add 1 tablespoon of soy sauce, 1 tablespoon of oligosaccharide, 1 tablespoon of mirin, and a pinch of black pepper to the pan. Reduce the heat to medium-low and let the sauce simmer and coat the scallops evenly. Keep the heat moderate to prevent the sauce from burning. Gently toss the scallops to ensure they are well-glazed. Once the sauce has thickened and is glossy, your delicious seared scallops are ready to serve!
