Main Ingredients- 150g Spam (can be substituted with frankfurters or other ham)
- 2 servings cooked rice (about 2 bowls)
- 1/2 onion, finely chopped
- 1/3 carrot, finely chopped
- 1/2 green onion, thinly sliced
Cooking Instructions
Step 1
Place the 150g of Spam in hot water for about 5 minutes. This step helps to remove excess oil and additives, resulting in a cleaner, more savory flavor. (This step can be skipped if you’re in a hurry.)
Step 2
Dice the Spam into small, uniform pieces, similar to how you’d chop kimchi. This ensures the Spam integrates well with the rice when stir-fried.
Step 3
Thinly slice the 1/2 green onion. The aroma released from sautéing the green onion will significantly enhance the overall flavor of your fried rice.
Step 4
Heat 3 tablespoons of cooking oil in a pan over medium-low heat. Add the sliced green onion and stir-fry until fragrant and slightly softened, creating aromatic green onion oil.
Step 5
Once the green onion is fragrant, add the diced Spam, carrots, and onion to the pan. Increase the heat to high and stir-fry briskly, ensuring everything is well combined and doesn’t stick to the pan.
Step 6
When the vegetables begin to soften slightly and the Spam starts to brown, add the 2 servings of warm cooked rice. Use your spatula to break up any clumps of rice and stir-fry until the rice is evenly mixed with the other ingredients.
Step 7
Once the rice is well combined with the ingredients, add 1 tablespoon of oyster sauce. Pour it along the side of the pan and stir-fry everything together. The oyster sauce will add a rich, umami depth to the dish.
Step 8
Now it’s time to season. Add 1/2 teaspoon of fine salt. Taste and adjust the saltiness as needed, considering the natural saltiness of the Spam. Stir-fry until the seasoning is evenly distributed.
Step 9
For better nutrient absorption and added flavor, it’s nice to lightly grind the sesame seeds. Add 2 tablespoons of ground sesame seeds and stir-fry briefly. The nutty aroma will further elevate your fried rice.
Step 10
Finally, just before turning off the heat, drizzle in 2 tablespoons of sesame oil. The subtle, fragrant aroma of sesame oil will complete the dish and give it a beautiful sheen. Give it a final stir, and your delicious Spam fried rice is ready!
