For the Patties- 300g ground beef

Cooking Instructions
Step 1
Heat 1.5 tablespoons of olive oil in a pan over medium heat. Add the finely chopped onions and sauté them slowly until they become a gentle golden brown and caramelized. This slow cooking brings out their sweetness and depth. Once the onions are nicely browned, add 1 tablespoon of minced garlic and cook for another minute until fragrant. Be careful not to burn the garlic. Remove from heat and let it cool slightly. This step is crucial for building flavor in your patties.
Step 2
While the onions are cooling, prepare the ground meats. Place the ground beef and ground pork on a clean kitchen towel or cheesecloth. Gently press down to absorb and remove any excess moisture or blood. Properly draining the meat is key to a clean flavor and a better texture for your patties.
Step 3
If you have fresh basil, finely chop about 0.5 tablespoon. Otherwise, use 1 tablespoon of dried basil. (Optional: you can also add 0.5 tablespoon of dried parsley for extra herby notes). In a large bowl, combine the cooled sautéed onions, drained ground meats, cornstarch, dried basil (or fresh basil), toasted salt (0.5 tsp), brown sugar (0.5 tsp), and black pepper. Now, it’s time to mix and knead! Use your hands to vigorously mix and knead the ingredients together for at least 5 minutes, or until the mixture becomes slightly sticky and cohesive. This ensures the patties will hold their shape and have a good texture when cooked.
Step 4
Once the patty mixture is well-combined, wrap it tightly with plastic wrap and refrigerate for at least 30 minutes. This resting period allows the flavors to meld together and makes the mixture easier to shape. If you’re short on time, you can proceed to shape the patties immediately, but chilling is recommended for best results.
Step 5
Shape the chilled (or unchilled) meat mixture into patties of your desired size and thickness. Heat a lightly oiled pan over medium-high heat. Cook the patties for about 4-5 minutes per side, or until they are nicely browned and cooked through. During the last couple of minutes of cooking, pour in the teriyaki sauce. Let it bubble and reduce, coating the patties in a glossy, flavorful glaze. Flip the patties to ensure they are evenly coated.
Step 6
Slice your bagels in half. You can toast them lightly for extra texture if desired. On the bottom half of each bagel, spread a generous layer of mayonnaise. On the top half, spread a layer of mustard. Next, layer on fresh lettuce leaves. Place a slice of cheddar cheese and a slice of gouda cheese on top of the lettuce. Add the glazed teriyaki patty. Top the patty with fresh tomato slices, then add another slice of cheese. Finally, place the top half of the bagel over everything to complete your magnificent bagel hamburger sandwich!
