Main Ingredients- 150g Duck Slices (smoked or raw duck slices work well)
- 1.5 bowls of warm cooked rice
- 3 Tbsp finely chopped kimchi (sour kimchi recommended)
- 2 Tbsp minced onion
- 2 Eggs
Cooking Instructions
Step 1
First, finely chop the duck slices intended for stir-frying. Heat a pan over medium-low heat (without adding any oil if using smoked duck, as it will render its own fat). Add the chopped duck and stir-fry until it’s lightly browned. If using raw duck, you might need a tiny bit of oil to start. Cook until the duck releases its delicious fat and becomes slightly crispy. Be careful not to burn it.
Step 2
Using the flavorful duck fat rendered in the pan, add the minced onion. Sauté the onion until it becomes translucent and fragrant. This step infuses the onion with the savory essence of the duck, adding a deeper layer of flavor to the fried rice. Keep the heat at a moderate level to prevent the onion from burning.
Step 3
Once the onions are nicely sautéed, add the finely chopped kimchi to the pan. Stir-fry the kimchi for about 2-3 minutes until it softens and the flavors meld together. Next, add the warm cooked rice. Using a spatula or spoon, gently break apart any clumps of rice and stir-fry everything together, ensuring the kimchi and duck mixture is evenly distributed throughout the rice. Cooking thoroughly at this stage is key for well-integrated flavors.
Step 4
Push the kimchi fried rice to one side of the pan. Carefully crack the eggs into the empty space and fry them sunny-side up. Cook over low heat, ensuring the yolks remain intact. This creates a beautiful, runny yolk to mix into the rice. Once the eggs are done to your liking, place them on top of the fried rice. Your delicious and nutritious Duck Kimchi Fried Rice is now complete! For an extra touch, drizzle with a little sesame oil, sprinkle with toasted sesame seeds, or add some shredded seaweed before serving.
