Main Ingredients

  • 1kg Pork ribs
  • 1/2 tsp Black pepper
  • A little toasted sesame seeds and chopped scallions (for garnish)

Pork Rib Marinade

  • 1/2 medium Onion, minced
  • 1/3 pear, minced
  • 4 Tbsp chopped white onion
  • 2 Bay leaves
  • 4 Tbsp Soy sauce
  • 2 Tbsp Corn syrup
  • 1.5 Tbsp Sugar
  • 1 Tbsp Plum extract (Maesil Cheong)
  • 2 tsp Ground toasted sesame seeds
  • 1/2 tsp Curry powder
  • 1 tsp Grated ginger
  • 1.5 Tbsp Sesame oil
  • 2 Tbsp Minced garlic
  • 180ml Jujube tea (or water steeped with dried jujubes)

Jujube Tea Preparation (for Marinade)

  • 20 Dried jujubes
  • 2 Scallion roots (cleaned)
  • 1/4 Pear (seeds removed)
  • 1L Water

Cooking Instructions

Step 1

First, let’s make the jujube tea, which is key to our delicious pork rib marinade. In a pot, combine the 20 dried jujubes, 2 cleaned scallion roots, 1/4 pear with seeds removed, and 1L of water. Cover and bring to a boil over high heat. Once boiling, reduce to medium heat and simmer for 30 minutes to create a rich jujube tea.

Now, let’s prepare the pork ribs. Separate the meat from the bones and slice it into bite-sized pieces, approximately 0.5cm thick. Separating the meat from the bones first makes for cleaner cuts. Lightly season the sliced ribs with 1/2 tsp of black pepper.

Make shallow, vertical cuts along the bone side of the ribs. This will help the meat cook more evenly and allow the marinade to penetrate better.

We’ll now sauté some ingredients to enhance the marinade’s flavor. Heat 1/2 Tbsp of cooking oil in a preheated frying pan. Add the minced onion and sauté over medium heat until translucent and a light golden brown. Sautéing the onion will deepen its sweetness and flavor considerably.

Once the onion is nicely browned, add the minced pear and sauté for another minute. This process helps concentrate the pear’s natural sweetness.

Transfer the sautéed onion and pear to a blender and blend until very smooth. If it’s difficult to blend, add a little water, a tablespoon at a time, until you achieve a smooth consistency. A smooth marinade is crucial!

Now, let’s complete the delicious marinade. Combine the blended pear and onion, the prepared 180ml of jujube tea, and all the remaining marinade ingredients (bay leaves, soy sauce, corn syrup, sugar, plum extract, ground toasted sesame seeds, curry powder, grated ginger, sesame oil, and minced garlic) in a blender or bowl. Mix thoroughly. (You can remove the bay leaves later if desired.)

Place the prepared pork ribs into the marinade and gently massage them to ensure they are well coated. It’s important to mix thoroughly so the marinade penetrates all the meat. Marinating for at least 30 minutes will result in a deeper flavor.

Heat 1 Tbsp of cooking oil in a preheated frying pan. Add the marinated pork ribs and sear over high heat until the surface turns a beautiful brown on both sides. This step helps to lock in the juices.

Once the ribs are browned, reduce the heat to medium. Add an additional 4 Tbsp of the reserved marinade to the pan. Cook for about 3-5 minutes, or until the marinade is absorbed and the ribs are glossy. The sauce will thicken and create a delicious coating.
