  • 1 bell pepper (or more)
  • 1/2 onion
  • 1 handful of carrots
  • Cabbage, to taste
  • 3 cloves of garlic (or to your preference)
  • 1 Tbsp Mirin (or cooking wine, rice wine, etc.)
  • 1 Tbsp Soju (optional, but recommended for tenderizing)
  • A pinch of black pepper

Sauce

  • 1 Tbsp soy sauce
  • 1 Tbsp plum extract (or syrup)
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds (toasted)
  • A pinch of black pepper

Slicing the marinated galbi before stir-frying makes it incredibly tender and easy to eat. I can’t believe I didn’t think of this sooner! Cut the marinated ribs, which are often long, into finger-thickness pieces.

Remember that meat shrinks as it cooks, so don’t slice it too thinly. Aim for a thickness that will hold up well during stir-frying.
