Main Ingredients- 2 medium fresh potatoes
- 1 tortilla
- 2 Tbsp butter
- 2-4 slices of cheese
- A little eggplant
- A little zucchini
- Salt to taste
- Pepper to taste
- Plenty of mozzarella cheese
- A pinch of parsley flakes
- A bit of baby kale (optional)
- A drizzle of olive oil
Cooking Instructions
Step 1
First, wash the potatoes thoroughly. Place them in a pot with plenty of water and boil. It’s best to cook them until they are about 80% done – tender enough to be pierced with a fork but not so soft that they fall apart. Once cooked, drain the potatoes, let them cool slightly, and then slice them thinly.
Step 2
Spread the softened butter evenly over the tortilla. The butter will melt and add wonderful flavor. Next, layer 2 to 4 slices of cheese on top of the buttered tortilla. The cheese will melt and help hold the potato toppings in place.
Step 3
Now, arrange the thinly sliced potatoes over the tortilla, starting from the edge and working your way inwards in a circular pattern, covering the surface evenly. The savory flavor of the potatoes will form an excellent base for your pizza.
Step 4
Intersperse the thinly sliced zucchini between the potato slices. The mild sweetness and soft texture of the zucchini will complement the potatoes beautifully.
Step 5
Slice the eggplant thinly and tuck it in between the potatoes and zucchini, similar to how you added the zucchini. Once all the vegetables are arranged, lightly season with salt and pepper. Now, place it in an air fryer and pre-bake at a temperature below 200°C (around 390°F) for about 5 minutes. This step helps to slightly dry out the vegetables and enhance their flavor, but you can skip it or pre-sauté the vegetables before placing them on the tortilla.
Step 6
After the initial baking, generously sprinkle plenty of mozzarella cheese over the pizza. Return it to the air fryer (or oven) and bake at 200°C (around 390°F) for no more than 10 minutes, until the cheese is melted and bubbly and the ingredients are tender.
Step 7
Remove the perfectly baked pizza from the air fryer. Sprinkle with parsley flakes for a touch of color and freshness. Top generously with baby kale (optional) and finish with a drizzle of olive oil, and a final grind of salt and pepper. The baby kale adds a fresh aroma and visual appeal, but you can substitute it with other salad greens if you prefer.
