A classic Spanish dish! We scooped up the shrimp and garlic, dipped the bread, and even finished the leftover olive oil – it was that good!
Main Ingredients- 1 Baguette
- 11 cloves Garlic
- 8 Cherry Tomatoes
- 1 Onion
- 6 Shrimp (peeled and deveined)
- 1 Tortilla

Cooking Instructions
Step 1
Let’s make Gambas al Ajillo, a delightful Spanish dish, right in your own kitchen!
Step 2
First, slice the baguette into bite-sized pieces. Lightly grease a frying pan with butter and toast the baguette slices over medium heat until golden brown and crispy on both sides. (You can also use a little olive oil for toasting if preferred.)

Peel the garlic cloves and thinly slice them. Wash the cherry tomatoes, remove the stems, and cut them in half.
Step 4
In a deep pan or a small clay pot (cazuela), generously pour in the olive oil. You want enough oil to almost cover the shrimp and garlic. Heat the olive oil over low heat, then add all the sliced garlic. Slowly cook the garlic until it’s fragrant and develops a light golden-brown color. Be careful not to burn the garlic by cooking over high heat. (If you like a bit of spice, add some red pepper flakes along with the garlic.)
Step 5
Once the garlic is nicely browned, add the thinly sliced onion to the pan. Sauté the onion with the garlic until it becomes translucent and tender, releasing its natural sweetness which enhances the flavor of the Gambas.
Step 6
Add the prepared shrimp to the pan and cook them. Shrimp can become tough if overcooked, so cook them just until they turn pink and become firm and plump.
Step 7
Finally, add the halved cherry tomatoes and 1 tablespoon of chicken stock (or water). Stir everything together gently. The chicken stock adds a savory depth and balances the overall flavors. Season with salt and pepper to your taste. (Be mindful not to overcook, as the tomatoes will release their juices.)
Step 8
Serve the Gambas al Ajillo warm with the toasted baguette slices and the tortilla. (If you’ve already devoured all the delicious baguette, the tortilla is perfect for scooping up the remaining goodness!)
Step 9
After enjoying all the shrimp, garlic, and vegetables, don’t discard the flavorful olive oil! Dip other vegetables like broccoli into the remaining oil. The oil is infused with the rich flavors of shrimp and garlic, creating an incredibly savory and nutty dipping sauce. Savor every last drop of this incredible taste!
