Main Ingredients- 156g Fresh Cabbage
- 1 block Firm Tofu
- 1/2 Medium Onion
- Fresh Parsley, for garnish
- 2 bowls Cooked Rice
Special Teriyaki Sauce- 200ml Water
- 100ml Soy Sauce
- 1/2 Tbsp Minced Garlic
- 10g Fresh Ginger (minced or julienned)
- 3 Tbsp Brown Sugar
- 1 Tbsp Corn Syrup (or similar sweetener)
- 50ml Mirin (Rice Wine)
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 200ml Water
- 100ml Soy Sauce
- 1/2 Tbsp Minced Garlic
- 10g Fresh Ginger (minced or julienned)
- 3 Tbsp Brown Sugar
- 1 Tbsp Corn Syrup (or similar sweetener)
- 50ml Mirin (Rice Wine)
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, prepare your vegetables: chop the cabbage into bite-sized pieces and thinly slice the onion. For the tofu, cut it into approximately 2-3cm cubes. It’s important to pat the tofu cubes thoroughly dry with paper towels or a clean kitchen cloth. This step helps achieve a crispier texture when pan-frying.

Now, let’s make the delicious teriyaki sauce! In a saucepan, combine 200ml of water, 100ml of soy sauce, and 50ml of mirin. Add the 1/2 tbsp of minced garlic, 10g of fresh ginger, 3 tbsp of brown sugar, and 1 tbsp of corn syrup. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium and let it simmer for about 5 minutes until it slightly thickens.
Step 3
After simmering for 5 minutes, turn off the heat. Stir in 1 tbsp of sesame oil and 1 tbsp of toasted sesame seeds. Mix well; this will add a wonderful depth of flavor and aroma to the sauce.

Heat a non-stick frying pan over medium heat with a very small amount of cooking oil. Add the sliced onion and chopped cabbage. Stir-fry until the vegetables become translucent and start to develop a light brown color. Cooking them well will bring out their natural sweetness and enhance the overall flavor.

Once the vegetables are nicely sautéed, transfer them to a separate bowl. They will be placed on top of the rice shortly.

Using the same frying pan, add just a touch more oil if needed. Place the dried tofu cubes into the pan. Cook over medium heat, rather than high heat, allowing each side of the tofu to turn a beautiful golden brown. Aim for a crispy exterior and a tender interior.

Once the tofu is golden brown on all sides, pour about 7-8 tablespoons of the prepared teriyaki sauce over it. Reduce the heat to low and let the tofu simmer in the sauce for about 2 minutes, allowing it to absorb the delicious glaze until the sauce thickens slightly.
