Today, I’m sharing a healthy and delicious diet meal recipe after a long time! This salad is packed with nutrients and can be enjoyed heartily without worrying about calories, thanks to the perfectly grilled mushrooms and a super simple homemade oriental dressing. It’s a grilled mushroom salad I often make when I’m tired of plain chicken breast salads, or when I feel like something more than just salad but don’t want a heavy meat dish. It even looks festive, making it a wonderful addition to your Christmas party menu!
Salad Ingredients- 4 fresh button mushrooms
- 5 cloves garlic
- 2 cups mixed salad greens (e.g., romaine, baby greens, your preference)
- Pinch of salt
- Pinch of black pepper
- A little Grana Padano cheese for garnish (optional)
Homemade Oriental Dressing Ingredients- 2 Tbsp soy sauce (regular soy sauce is fine)
- 3 Tbsp extra virgin olive oil
- 1 Tbsp sugar (can substitute with honey or agave syrup)
- 2 Tbsp vinegar (apple cider or rice vinegar recommended)
- 1/2 Tbsp sesame oil
- 1/3 Tbsp minced garlic
- 2 Tbsp soy sauce (regular soy sauce is fine)
- 3 Tbsp extra virgin olive oil
- 1 Tbsp sugar (can substitute with honey or agave syrup)
- 2 Tbsp vinegar (apple cider or rice vinegar recommended)
- 1/2 Tbsp sesame oil
- 1/3 Tbsp minced garlic
Cooking Instructions
Step 1
First, wash and thoroughly dry your salad greens. Heat a pan over medium-low heat and add a little olive oil. Gently sauté the whole garlic cloves until they are golden brown and fragrant. Once the garlic is fragrant, slice the button mushrooms into bite-sized pieces and add them to the pan. Season with a pinch of salt and pepper, and cook until evenly browned. Grilling them until they soften and develop a nice golden-brown color will enhance their flavor.
Step 2
In a small bowl, combine all the oriental dressing ingredients: soy sauce, olive oil, sugar, vinegar, sesame oil, and minced garlic. Whisk together with a whisk or fork until the sugar is completely dissolved. Feel free to adjust the amount of soy sauce or vinegar to your personal taste.
Step 3
Arrange the prepared salad greens attractively on a large plate. Top with the grilled mushrooms and garlic. Drizzle generously with the homemade oriental dressing just before serving.
