This is a side dish made by grilling scallions instead of blanching them, then mixing them with gim (roasted seaweed) and king oyster mushrooms. It’s a unique banchan that brings out the natural flavors of the ingredients.

Main Ingredients

  • 1 king oyster mushroom
  • 1 sheet roasted gim (seaweed, seasoned)

Seasoning Ingredients

  • 1.5 Tbsp soy sauce
  • 1 Tbsp mirin (cooking wine)
  • 1 Tbsp plum extract
  • 1 Tbsp minced garlic
  • 1 Tbsp gochugaru (Korean chili flakes)
  • 1/2 Tbsp sugar
  • Pinch of toasted sesame seeds (for garnish)
  • Pinch of sesame oil (for garnish)

Cooking Instructions

1. Trim the roots off the scallions, then cut them into 3cm lengths. Rinse them lightly under running water and drain well.

2. Cut off the base of the king oyster mushroom and slice it lengthwise into strips about 0.5cm thick. If you like a bit of spice, finely mince a chili pepper (optional).

3. Heat a pan over medium heat. Add the sliced king oyster mushrooms without any oil and grill until nicely browned. The mushrooms will release their own moisture as they cook. Stir occasionally to prevent burning. (Tip: Since you’re not using oil, they can burn easily, so keep the heat on medium.)

4. In the same pan, add the cut scallions and grill for 2-3 minutes without oil, until the moisture has evaporated. This step helps to slightly char the scallions and enhance their flavor. (Tip: Scallions release a lot of water, so cooking them over medium-high heat while stirring helps to evaporate the moisture quickly.)

5. Crumble the roasted gim into bite-sized pieces. If you’re using gim intended for kimbap, it will provide a pleasant crispiness and flavor. If you’re using plain, unseasoned gim, lightly toast it before using.

6. Prepare the seasoning. In a bowl, combine 1.5 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp plum extract, 1 Tbsp minced garlic, 1 Tbsp gochugaru, and 1/2 Tbsp sugar. Mix well to create the seasoning sauce.

7. In a large bowl, combine the grilled scallions, grilled king oyster mushrooms, and crumbled roasted gim. Add the prepared seasoning sauce and gently toss to coat everything evenly. Finish with a sprinkle of toasted sesame seeds and a drizzle of sesame oil for extra aroma and flavor. Your delicious grilled scallion and gim salad is ready!
