Main Ingredients

  • 460g Potatoes (approx. 2-3 medium)
  • 1/2 Onion
  • 1 Tbsp Salt
  • 4 Tbsp Corn Syrup (or equivalent)
  • A little Cooking Oil

Seasoning

  • 1 tsp Minced Garlic
  • 1 Tbsp Perilla Oil (Deulgireum)
  • 1 Tbsp Toasted Sesame Seeds (ground or whole)

Cooking Instructions

Step 1

First, peel the potatoes and wash them thoroughly. Then, slice them into thin, long strips about 0.3cm thick. Thinly slice the onion as well. Rinse the sliced potatoes in cold water 2-3 times to remove excess starch, then drain well.

In a bowl, combine the drained potato strips with 1 Tbsp of salt and 4 Tbsp of corn syrup. Gently mix and let them marinate for about 15-20 minutes. This step will help tenderize the potatoes and infuse them with a subtle sweetness.

Drain the marinated potato strips using a colander. Shake off any excess water.

Heat a non-stick pan over medium heat and add a generous amount of cooking oil. Add the sliced onions and 1 tsp of minced garlic. Spread them evenly and sauté over low heat until the onions become translucent and fragrant. Sautéing the onions first helps to eliminate any raw potato smell and adds depth of flavor.

Once the onions are slightly softened, push them to one side of the pan. Place the drained potato strips on the empty side of the pan.

Cover the pan with a lid and cook over high heat for 1-2 minutes. Once steam starts to rise, reduce the heat to medium-low. Gently stir the potatoes with chopsticks or a spatula to prevent sticking. Cover again and repeat this steaming and stirring process 2-3 times. The potatoes are ready when they are tender enough to be easily mashed with a fork.

When the potatoes are almost cooked, add 1 Tbsp of perilla oil (deulgireum) and stir-fry over high heat for about 1-2 minutes until the fragrant oil is well incorporated and the potatoes are lightly browned.
