Firm tofu is recommended for pan-frying to maintain its shape. Pizza cheese helps the filling ingredients clump together, and sliced cheese can also be used depending on the product.

Lightly rinse the firm tofu under running water and pat it dry. Also, bring the pizza cheese out to room temperature about 30 minutes prior to use; it’s easier to handle when softened. Premix the soy sauce, sugar, and water to create the savory glaze.

Cut the firm tofu block in half first, then slice it into uniform pieces about 0.5 to 0.7 cm thick.
