Cooking Instructions

Step 1

Hello everyone! Today, I’m sharing a super easy and simple recipe for Haesintan, the ultimate revitalizing dish perfect for when you lack appetite or energy. I bought pre-cleaned seafood for convenience, but I highly recommend using a whole octopus if possible. It adds a much better texture and visual appeal.

Step 1

Step 2

Rinse all the seafood and the chicken thoroughly under cold running water. Since my ingredients were already prepared, I just needed to give them a quick rinse. It’s important to preserve the fresh, natural flavors of the ingredients.

Step 2

Step 3

Many recipes call for cooking the chicken first and then adding the seafood separately. However, to save time and allow all the flavors to meld beautifully, I’m choosing to cook everything together today. If you have samgyetang herb packets, feel free to add them with the chicken. (You can omit this if you don’t have them).

Step 3

Step 4

Now, place the prepared chicken and seafood (except for the octopus) into a large pot. Bring to a rolling boil over high heat and simmer for about 45 minutes. Make sure to use enough water so the broth doesn’t reduce too much. Covering the pot will help concentrate the flavors.

Step 4

Step 5

After 45 minutes, check if the chicken and seafood are cooked through. You’ll notice the broth has deepened in color and a delicious aroma will fill your kitchen. Skim off any foam that rises to the surface for a clearer, cleaner broth.

Step 5

Step 6

When the chicken and seafood are almost cooked, it’s time to add the fresh octopus. Octopus can become tough if overcooked, so simmer it for just another 5-10 minutes to ensure it’s tender and delicious. Reduce the heat to low, cover, and let it simmer for 5 more minutes.

Step 6

Step 7

While we wait, let’s whip up the amazing dipping sauce! In a small bowl, combine 3 Tbsp soy sauce, 1 Tbsp perilla seed powder, 1 Tbsp sugar, and 1-2 Tbsp vinegar. Mix well. For an extra zing, add a touch of mustard paste according to your preference. This sauce is truly magical!

Step 7

Step 8

Voilà! Your delicious Haesintan is ready! Thanks to the whole chicken, this dish is incredibly generous in portion size. It’s more than enough for two people and perfect for a family of 3-4. Doesn’t it look hearty and appetizing?

Step 8

Step 9

Now for the best part – eating! Shred the chicken into bite-sized pieces. Prepare the abalone, shrimp, and octopus for easy eating. Everything should be wonderfully tender from the long simmering time.

Step 9

Step 10

Serve the tender chicken and seafood with the special dipping sauce. The true star, however, is the deep, refreshing broth. Its rich umami flavor combined with the essence of the sea makes it superior to any other soup or restorative broth. It’s the perfect dish for revitalizing your body. For an even more satisfying meal, try adding rice to the broth. Enjoy this healthy and delicious Haesintan!
