Rice Ingredients

  • 150g Glutinous rice (approx. 1 cup)
  • 150g Short-grain rice (approx. 1 cup)
  • 350ml Water (or shiitake mushroom broth)
  • 1 handful Garlic cloves (approx. 10-15 cloves)
  • 1 Tbsp Dried seaweed (hijiki)
  • 20g Dried shiitake mushrooms
  • 40g Carrot (approx. 1/4 medium)

Halibut Seasoning and Cooking

  • 0.5 Tbsp Cooking sake (or mirin)
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 1 tsp Avocado oil (or cooking oil)

Chive Soy Sauce Condiment

  • 3 Tbsp Soy sauce
  • 1 Tbsp Plum extract (maesilcheong)
  • 1/8 Onion
  • 1 handful Chives
  • 1/2 Red chili pepper
  • 1 Green chili pepper
  • Sesame seeds

Cooking Instructions

Step 1

First, prepare the rice. Mix glutinous rice and short-grain rice in a 1:1 ratio. Rinse them thoroughly and soak in cold water for 30 minutes. Drain the soaked rice in a sieve. Rehydrate the dried shiitake mushrooms by soaking them in cold water for about 20 minutes until softened. Squeeze out excess water and slice them into bite-sized pieces (about 0.5cm thick). Reserve the soaking liquid from the shiitake mushrooms for cooking the rice. Thinly slice the garlic cloves into 2-3 pieces. Heat 1 tsp of avocado oil in a pan over medium-low heat and pan-fry the garlic slices until golden brown and fragrant, like deep-frying. Be careful not to burn the garlic; a nice golden hue is desired for a savory flavor.

Next, prepare the halibut. Pat the halibut fillet dry with paper towels. Place the halibut in a bowl and season with 0.5 Tbsp cooking sake, 1/4 tsp salt, and 1/4 tsp black pepper. Let it marinate for about 10 minutes. Heat a pan over medium heat and sear the marinated halibut until golden brown on both sides. Don’t discard the juices released from the fish; they will add flavor to the rice. The dried seaweed (hijiki) can be used directly without soaking. Cut the carrot into thin julienne strips or dice it into small, decorative shapes. Ensure you have the reserved shiitake mushroom soaking liquid ready.

Arrange the seared halibut, pan-fried garlic slices, sliced shiitake mushrooms, carrots, and dried seaweed on top of the rice. Carefully pour in 350ml of water (or the reserved shiitake mushroom broth) so it covers the ingredients. Cover the pot with a lid, bring to a boil over high heat, then reduce the heat to low and let it simmer for 5 minutes to steam. Once the rice is cooked, carefully open the lid. Using a spatula, gently break the seared halibut into bite-sized pieces, being careful not to mash the rice grains.
