Main Ingredients- 1 piece of fresh halibut fillet
- 1/2 onion
- 5 cherry tomatoes
- 4 bite-sized pieces of broccoli (optional)
- 3 small potatoes (optional)
- 5 dried chili peppers (peperoncino)
- 8 cloves of garlic
Seasoning & Others- 3 Tbsp salt
- 2 Tbsp black pepper
- 400ml olive oil (generous amount)

- 4 Tbsp cooking wine (mirin or similar)

Cooking Instructions
Step 1
First, prepare the fresh domestic halibut fillet. To remove any fishy odor and enhance its tender texture, marinate it in 4 Tbsp of cooking wine for about 10 minutes. This step is the secret to elevating the flavor.
Step 2
Do not season the halibut separately. Generously coat a pan with 400ml of olive oil and heat over medium heat. Add the prepared halibut and pan-fry it until golden brown and slightly crispy on the outside. This method helps to seal in the halibut’s juices, keeping it moist.
Step 3
Once the halibut is golden brown on the outside, temporarily remove it to a plate. Now, over low heat, slowly sauté the sliced garlic cloves (8 cloves) in the olive oil used for frying the halibut. Infuse the oil with garlic aroma, stirring until it turns a light golden brown. Be careful not to burn the garlic; this process will thoroughly imbue the olive oil with garlic’s rich flavor.
Step 4
Prepare the accompanying ingredients. Halve the cherry tomatoes after removing their stems. If using mushrooms (optional), cut them into quarters. Slice the onion into bite-sized pieces.
Step 5
For optional ingredients, blanch the broccoli pieces briefly in boiling water until tender-crisp. Prepare the small potatoes as well. Add the prepared vegetables (onion, cherry tomatoes, broccoli, potatoes) and dried chili peppers (5 pieces) to the garlic-infused oil. Sauté over medium-low heat to extract the flavors and aromas of the ingredients into the oil.
Step 6
Once the ingredients start releasing their fragrant aromas, add 2 slices of butter and let it melt slowly. As the butter melts, it adds a rich, creamy flavor to the gambas, making it even more delicious.
Step 7
Now, return the halibut to the pan. Maintain low heat and gently spoon the hot, bubbling oil over the halibut to warm it through. Be careful not to overcook; gently heat it for about 1-2 minutes, allowing the halibut to warm up and meld with the sauce.
