Scrambled Egg Fried Rice Ingredients
  • Chives, finely chopped
  • Spam, diced into cubes
  • Eggs
  • A little soy sauce from pickled garlic scapes (optional)
  • Warm cooked rice
  • Olive oil
  • Toasted sesame seeds, for garnish

Hawaiian Spam Musubi Ingredients
  • 2 sheets of Nori (seaweed)
  • Spam (200g, 1 can), sliced lengthwise
  • Romaine lettuce or Perilla leaves (깻잎)
  • 3 Eggs (with a pinch of salt, beaten)
  • Cooked rice for 2 servings (seasoned with 1 Tbsp sesame oil, a pinch of salt, and a little toasted sesame seeds)
  • 1 handful of pickled garlic scapes, finely chopped (optional)

Cooking Instructions

Step 1

1. For the scrambled egg fried rice: Finely chop the chives. Dice the Spam into approximately 1cm cubes.

2. Heat 2 Tbsp of olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant. Increase heat to high, add the diced Spam, and stir-fry until golden brown. Add the cooked rice and stir-fry until fluffy, seasoning with a little soy sauce (or the soy sauce from pickled garlic scapes if using). (Pickled garlic scapes are optional; finely chopping and adding them during the stir-fry will enhance the flavor).

3. In a separate pan, lightly grease with oil and pour in the beaten eggs. Use a chopstick to gently scramble the eggs into soft curds over medium heat. Combine the fried rice and scrambled eggs in a bowl, sprinkle with toasted sesame seeds. Your scrambled egg fried rice is ready!

Step 4

1. To make the Hawaiian Spam Musubi: Slice the Spam into approximately 1cm thick planks. Heat a pan (no oil needed) and pan-fry the Spam slices until golden brown on both sides.

2. Cut the Nori sheets in half lengthwise. Beat the eggs with a pinch of salt and cook them into thin omelets, then cut them into strips matching the width of the Spam. Wash the Romaine lettuce or Perilla leaves and pat them dry. Season the warm rice with 1 Tbsp sesame oil, a pinch of salt, and a little toasted sesame seeds, mixing well. Finely chop the pickled garlic scapes if you are using them.

5. Line a musubi mold or a clean Spam can with plastic wrap. Layer the ingredients in the following order: rice – egg omelet strip – fried Spam slice – (chopped pickled garlic scapes, if using) – Romaine lettuce or Perilla leaf – rice. Press down firmly to shape the musubi, then carefully remove it from the mold.

Step 7

6. Unwrap the shaped musubi and place it onto a sheet of Nori. Roll it up tightly with the Nori. Slice the musubi into bite-sized pieces (about 2-3 cm thick) and arrange them on a plate. Enjoy your delicious Hawaiian Spam Musubi!
