- 2 Okra pods

First, thoroughly wash the okra pods under running water. Trim off the stem and tip ends with a knife. Then, slice the okra into rounds about 0.5cm thick. Set aside the sliced okra.

Thinly slice 1/4 of an onion into slivers. Slicing them thinly will ensure a softer texture when stir-fried.

In a bowl, crack the 2 eggs. Add 3 tablespoons of milk to the eggs. (If you don’t have milk, you can substitute with 2 tablespoons of water.) Whisk the eggs and milk together until well combined, creating a smooth egg mixture.

Heat 2-3 tablespoons of cooking oil in a frying pan over medium-high heat. Add the sliced onions and okra to the pan. Stir-fry until the onions become translucent and the okra is slightly tender, about 2-3 minutes. Be careful not to burn the vegetables.
