Cooking Instructions
Step 1
First, wash the cabbage thoroughly, remove the core, and thinly shred it. Peel the carrot and also shred it thinly. Place the shredded cabbage and carrot in a bowl, add 3 tablespoons of coarse salt, gently toss to combine, and let it sit for 30 minutes to wilt. This process helps maintain the vegetables’ crispness while removing excess moisture.
Step 2
After 30 minutes, firmly squeeze the wilted cabbage and carrot with your hands to remove as much water as possible. If too much water remains, the coleslaw can taste bland, so squeezing it well is crucial. Add 5 tablespoons of sweet corn kernels to the squeezed vegetables.
