Healthy and Delicious Steak with Sautéed Vegetables
Recipe for Lean Beef Steak and Fresh Sautéed Vegetables
Enjoy tender beef steak alongside sautéed vegetables that remain light and flavorful even when cooked in oil. This recipe creates a nutritious and satisfying meal.
Main Ingredients- Beef sirloin or tenderloin 150g
- Tofu 1/2 block (approx. 100g)
- 1 cherry tomato (or 1/2 regular tomato)
- 3/4 head cabbage (approx. 300g)
- 1/2 Korean green chili pepper
- 1/4 stalk green onion
- 1/4 onion (approx. 50g)
Sautéed Vegetable Seasoning- A pinch of herb salt
- A pinch of black pepper
- A pinch of ginger powder
- 1 Tbsp anchovy sauce (fish sauce)
- 1/2 Tbsp raw sugar (or granulated sugar)
- 1 Tbsp sesame oil
- A sprinkle of toasted sesame seeds (for garnish)
- A pinch of herb salt
- A pinch of black pepper
- A pinch of ginger powder
- 1 Tbsp anchovy sauce (fish sauce)
- 1/2 Tbsp raw sugar (or granulated sugar)
- 1 Tbsp sesame oil
- A sprinkle of toasted sesame seeds (for garnish)
Cooking Instructions
Step 1
First, dice the tofu into bite-sized cubes. Heat a little cooking oil in a pan, then pan-fry the diced tofu until golden brown on both sides. This creates a tofu that’s slightly crisp on the outside and soft on the inside.
Step 2
Cut the cabbage into roughly 3-4 large pieces and chop the onion coarsely. Thinly slice the Korean green chili pepper after removing the seeds to add a hint of spice. If using a regular tomato, cut it into quarters, making sure to avoid letting the juices escape excessively. Add cooking oil to a hot pan and stir-fry the prepared vegetables over high heat to maintain their fresh texture.
Step 3
Once the vegetables begin to soften slightly, season them with 1/2 Tbsp of raw sugar, 1 Tbsp of anchovy sauce, and a pinch of herb salt to taste. The sweetness of the vegetables combined with the umami from the anchovy sauce will create a rich flavor. When the vegetables reach your desired tenderness, turn off the heat and stir in 1 Tbsp of sesame oil for a nutty aroma.
Step 4
Add the pre-fried tofu to the sautéed vegetables and gently mix them together. Ensure the tofu is coated with the vegetable stir-fry sauce for enhanced flavor. Finally, sprinkle some toasted sesame seeds on top to complete this visually appealing and delicious dish of sautéed vegetables and tofu.
Step 5
Now, let’s prepare the steak. Take the beef for the steak out of the refrigerator about 10-15 minutes beforehand to allow it to come to room temperature. This helps the steak cook more evenly and retain its juices when it hits the hot pan. Season the surface of the steak evenly with herb salt, black pepper, and ginger powder.
Step 6
Heat a pan over high heat until it’s very hot. Add a little steak oil, then place the seasoned steak in the pan. Sear the steak over high heat, cooking it on both sides to your desired level of doneness. Searing the exterior is crucial for locking in the juices. Cook for about 2-3 minutes per side, then flip and cook the other side similarly. (Allowing the steak to rest after cooking will result in even juicier meat.)
Step 7
Serve the warm steak alongside the fresh sautéed vegetables. (Tip: You can also serve this with baked sweet potato instead of rice for a complete and satisfying meal.)
