Dry Ingredients

  • 140g cake flour (low-gluten flour)
  • 20g almond flour
  • 80g brown rice flour
  • 5g baking powder
  • 3g baking soda
  • 1 tsp salt
  • 60g sliced almonds (for topping)

In a large bowl, whisk together the cake flour, almond flour, brown rice flour, baking powder, baking soda, and salt. It’s recommended to sift these dry ingredients together to ensure they are well combined and to remove any lumps, which will contribute to a lighter texture in your bread.

In a separate bowl, lightly beat the 2 large eggs until just combined. No need to whip them extensively.

Add the powdered sugar and granulated sugar to the beaten eggs. Stir with a whisk until the sugars are mostly dissolved and the mixture is smooth. Avoid overmixing.

Gradually pour in the 160ml of vegetable oil while whisking continuously. Continue mixing until the oil is fully incorporated and the mixture is smooth and emulsified. A neutral oil like canola or grapeseed is best to let the banana flavor shine.

Peel the 4 ripe bananas and mash them thoroughly using a fork or your hands in a medium bowl. Some small lumps are perfectly fine and can add texture. The riper the bananas, the sweeter and more flavorful your bread will be.

Pour the wet ingredients (egg, sugar, oil mixture) into the bowl with the mashed bananas. Gently fold them together with a spatula until just combined. Be careful not to overmix at this stage.

Add the sifted dry ingredients and about two-thirds of the sliced almonds (reserving some for topping) to the banana mixture. Using a spatula, gently fold everything together until just combined and no dry streaks of flour remain. Overmixing can lead to a tough bread, so mix only until the ingredients are incorporated.

Pour the batter into a prepared round baking pan (approximately 18-20 cm diameter). You can line the pan with parchment paper or grease it lightly to prevent sticking. Smooth the top of the batter with your spatula. Sprinkle the reserved sliced almonds evenly over the top for a beautiful finish.
