Healthy Beef Brisket Rolls with Fresh Vegetables

Main Ingredients- 250g Beef Brisket (thinly sliced)
- 2 cups Cabbage (thinly shredded)
- 1/2 cup Carrot (thinly shredded)
- 1/2 cup Perilla Leaves (깻잎, thinly shredded)
- 1/2 cup Mushrooms (shiitake, king oyster, etc., thinly sliced)
Dipping Sauce- 2 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 1 Tbsp Vinegar
- 2 Tbsp Soy Sauce
- 2 Tbsp Sugar
- 1 Tbsp Vinegar
Cooking Instructions
Step 1
First, thoroughly wash and dry all your vegetables. Shred the cabbage and carrots thinly. Finely shred the perilla leaves (깻잎). Slice your chosen mushrooms thinly. Combine all the prepared vegetables in a bowl and toss lightly.
Step 2
Lay out slices of beef brisket on a clean surface, making sure they don’t overlap too much. Place a generous portion of the mixed vegetables onto one end of each beef slice. Carefully roll the beef slice tightly around the vegetables, starting from the end with the filling.
Step 3
Arrange the beef and vegetable rolls in a steamer basket, ensuring they are not crowded. Steam for about 5-7 minutes, or until the beef changes color from pink to brown. Be careful not to overcook, as this can make the beef dry.
Step 4
While the rolls are steaming, prepare the dipping sauce. In a small bowl, whisk together 2 tablespoons of soy sauce, 2 tablespoons of sugar, and 1 tablespoon of vinegar until well combined. Once the rolls are cooked, slice them into bite-sized pieces and serve with the prepared dipping sauce.
