Main Ingredients- 3 sheets of seaweed for kimbap
- 2 servings of buckwheat noodles
- 6 fresh perilla leaves (깻잎)
- 4 eggs
- 1/2 carrot
- A little soy sauce
- A little wasabi
Cooking Instructions
Step 1
First, crack 4 eggs into a bowl and whisk them thoroughly. Removing the chalazae will result in a smoother egg omelet.
Step 2
Lightly grease a heated pan and pour in the whisked eggs to make thin omelets. Once cooled slightly, roll them up tightly and slice them into approximately 0.5cm thick strips.
Step 3
Wash the carrot thoroughly, peel it, and then julienne it into strips of similar thickness to the egg omelet.
Step 4
Lightly stir-fry the julienned carrot in a preheated pan with just a tiny bit of oil for 1-2 minutes. The key is to maintain its crisp texture, so avoid overcooking.
Step 5
In a pot of boiling water, add 2 servings of buckwheat noodles and cook for the time specified on the package (usually 4 minutes). Immediately rinse the cooked noodles under cold water to remove heat, drain well, and let them cool. It’s important to separate the noodles gently so they don’t clump together.
Step 6
Place a sheet of kimbap seaweed on a bamboo mat. Spread the prepared buckwheat noodles thinly over the seaweed. Layer the perilla leaves on top, followed by the sliced egg omelet and stir-fried carrots, arranging them neatly. (Order: Buckwheat noodles – Perilla leaves – Egg – Carrot)
Step 7
Using the bamboo mat, tightly roll the kimbap. Press firmly as you roll to maintain the shape. Once rolled, slice the kimbap into bite-sized pieces (about 1.5-2cm thick).
Step 8
Serve this completed Buckwheat Noodle Kimbap with warm stir-fried vegetables and a chicken breast salad to create a satisfying and healthy diet lunchbox.
Step 9
As this is a diet meal, the flavor might be subtle. For extra taste, dip the kimbap into a sauce made with soy sauce and wasabi.
