Pizza Dough & Topping Ingredients

  • 1/8 head of fresh cabbage
  • 2 fresh eggs
  • Pinch of fine salt
  • A little extra virgin olive oil
  • 1 Tbsp rich tomato sauce
  • A little mozzarella cheese
  • 2 cherry tomatoes
  • A few baby spinach leaves
  • A dollop of thick Greek yogurt

Cooking Instructions

Step 1

First, prepare 1/8 of a head of cabbage and shred it as thinly as possible. Place the shredded cabbage in a large bowl, crack in 2 fresh eggs, and add a pinch of fine salt. Stir everything together well to create the batter.

Step 1

Step 2

Lightly coat a pan preheated over medium-low heat with olive oil. Carefully place 1 sheet of rice paper at the bottom of the pan. Spread the prepared cabbage mixture evenly over the rice paper to form the pizza crust. Cover with a lid and cook slowly over low heat until the cabbage is tender and the bottom is golden brown. (approx. 5-7 minutes)

Step 2

Step 3

Once the bottom of the pizza crust is a delicious golden brown, carefully flip it over. Spread 1 tablespoon of tomato sauce evenly over the flipped side, leaving a small border around the edges. The sauce’s sweet and tangy flavor will balance the overall taste.

Step 3

Step 4

On top of the tomato sauce, generously sprinkle the mozzarella cheese. Cut the fresh cherry tomatoes in half and arrange them, then scatter the baby spinach leaves attractively. After adding all the toppings, cover the pan again with the lid. Continue cooking over low heat until the mozzarella cheese is completely melted and stretchy. (approx. 3-5 minutes)

Step 4

Step 5

Carefully transfer the pizza with the melted cheese and perfectly cooked cabbage to a plate. Finally, add a generous dollop of thick, rich Greek yogurt on top. This cuts through any richness and adds a refreshing touch, creating a fantastic flavor combination! Enjoy it warm right away.
