Main Ingredients- 2 free-range chicken breasts (approx. 200-250g)
- 1/3 yellow bell pepper
- 1/3 red bell pepper
- 1/3 green bell pepper
- 1 king oyster mushroom
- 1 small carrot
Cooking Instructions
Step 1
First, thaw the 2 chicken breasts if frozen. Rinse them thoroughly under cold running water and pat dry.
Step 2
Now, prepare the vegetables for the rolls. Wash and thinly julienne the yellow bell pepper, red bell pepper, green bell pepper, king oyster mushroom, and carrot. Ensure they are all cut into similar-sized strips for even cooking and neat rolls.
Step 3
Cut the yellow and red bell peppers into thin strips, about 0.5 cm thick. This adds beautiful color to your dish.
Step 4
Julienne the green bell pepper to a similar thickness. Its fresh aroma complements the chicken beautifully.

Trim the tough ends off the king oyster mushroom and slice it into thin, long strips, about 0.5 cm thick. This adds a delightful chewy texture.

Peel the small carrot and cut it into fine julienne strips, about 0.5 cm thick. The carrot’s natural sweetness balances the overall flavor.

Prepare the chicken breasts. If they are thick, make a lengthwise cut to butterfly them, then slice them thinly, about 0.5 cm thick. Cutting one breast into 2-3 pieces will make them easier to roll.

Put on disposable gloves and gently press down on the thinly sliced chicken breasts with both hands to flatten them. This makes it much easier to place the vegetables and roll them up.

Season the flattened chicken breasts. Sprinkle them evenly with Jukyeom (sea salt), black pepper, and your chosen herbs. Be careful not to over-season.

Arrange the prepared vegetable strips neatly over the seasoned chicken breast. Start from one end and tightly roll the chicken breast around the vegetables, similar to making a sushi roll or kimbap.

Place the rolled chicken breast and vegetable rolls onto a baking sheet. Leave some space between each roll for even baking.

Brush the outside of the chicken breast rolls lightly with olive oil. This will help them achieve a lovely golden-brown crispiness when baked.

Sprinkle a little more herbs or black pepper on top of the oiled rolls for extra flavor. Bake in a preheated oven at 180°C (350°F) for about 20 minutes, or until golden brown and cooked through. Adjust baking time as needed based on your oven.
