When my teenage daughter asked for a delicious food that’s also good for her diet, I came up with this homemade black soybean milk. It’s a drink I frequently make because once prepared, she can easily enjoy it on her own. Its rich flavor and abundant nutrients make it a perfect healthy snack for the whole family.
Main Ingredients- Black soybeans (Seoritae) 80g
- Nuts (almonds, walnuts, etc.) 30g
- Sesame seeds or black sesame seeds 1 Tbsp
Cooking Instructions
Step 1
First, the foundation of delicious soy milk is thorough bean preparation! Take 80g of black soybeans (Seoritae) and rinse them thoroughly. Add 300ml of water to the washed beans and soak them for half a day (about 8-10 hours). Soaking them the night before will make the process much easier the next day.
Step 2
Combine the soaked black soybeans, the soaking water (300ml), and fresh water (200ml) in a pot. Add 1/3 tsp of salt for seasoning, and bring to a boil over high heat.
Step 3
Once the water starts boiling vigorously, reduce the heat to medium. Skim off any foam that rises to the surface; this not only improves the appearance but also the flavor of the soy milk.
Step 4
Now for a special step to enhance texture and remove any ‘beany’ taste! Quickly rinse the cooked beans under cold running water to cool them down. This quick ‘cold shower’ helps eliminate any unpleasant odor and results in a smoother texture.
Step 5
Prepare the beans that have undergone the cold rinse, along with the reserved soaking water. Do not discard the soaking water; make sure to add it to the blender when you grind the beans. This soaking water is the secret ingredient for a rich and nutty soy milk.
Step 6
In a blender jar, add the cold-rinsed beans, the reserved soaking water, 30g of nuts, and 1 Tbsp of sesame seeds (or black sesame seeds). Now, blend everything thoroughly until you achieve a smooth soy milk consistency.
Step 7
Pour the smoothly blended soy milk into a cup or container. For added sweetness and creaminess, stir in 1/2 Tbsp of honey and 100ml of milk, adjusting to your preference. Your healthy and delicious homemade black soybean milk is now ready! Enjoy it warm or chilled.
