Main Ingredients
- 150g zucchini (about half a medium zucchini)
- 50g enoki mushrooms
- 1 large egg
- 1 tbsp starch (e.g., cornstarch or potato starch)
- 10g butter
Cooking Instructions
Step 1
First, prepare the zucchini that will serve as the pizza crust. Using a mandoline or a sharp knife, julienne the 150g of zucchini into thin strips. This is approximately half of a medium-sized zucchini. Cutting them thinly will ensure they cook through evenly and hold together well.
Step 2
Trim the base of the enoki mushrooms and cut them into roughly three equal lengths with scissors. Aim for a similar length to the zucchini strips for easier mixing.
Step 3
In a bowl, combine the julienned zucchini and the prepared enoki mushrooms. Add 1g of salt for seasoning. I tend to prefer less salt, so 1g is a good starting point, but feel free to adjust according to your preference.
Step 4
Add a pinch of black pepper to enhance the flavor. Sprinkle in as much as you like, according to your taste.
Step 5
Crack in 1 large egg. Add 1 tablespoon of starch, which will help bind the ingredients and give the crust a slightly crisp texture.
Step 6
Whisk everything together gently with a fork or spoon until well combined, forming a cohesive mixture. Ensure there are no clumps and all ingredients are evenly distributed.
Step 7
Now, let’s prepare the pan. Heat a non-stick frying pan over medium heat. Add a small amount of cooking oil and melt the 10g of butter. The butter will add a wonderful aroma and flavor.
Step 8
Pour the entire zucchini mixture into the heated pan. Use a spatula or the back of a spoon to spread it evenly into a pizza shape. Try not to make it too thick, so it cooks through properly.
Step 9
Cook over medium-low heat for about 5-7 minutes, until the bottom is golden brown and set. Once the edges look slightly browned, carefully flip the pizza using a spatula. Be gentle to prevent it from breaking.
Step 10
Once the zucchini base is cooked, generously sprinkle your desired amount of shredded mozzarella cheese over the top. Remember that the cheese will melt down, so don’t be shy!
Step 11
Reduce the heat to low and cover the pan with a lid. Allow the cheese to melt slowly and become gooey. Cooking on low heat prevents the cheese from burning while ensuring it melts beautifully.
Step 12
When the mozzarella cheese is fully melted and looks deliciously bubbly, turn off the heat. Leaving the lid on for another minute will allow the residual heat to further melt the cheese for a perfect finish. Optionally, sprinkle with dried parsley flakes for a final touch. Your healthy zucchini veggie pizza is now ready to enjoy!
