Craving noodles while on a diet? Here’s a way to enjoy a satisfying noodle soup without the traditional flour noodles! This recipe uses fresh vegetables and delicate egg crepes for a guilt-free, delicious meal.
Marinated Beef
- 30g beef (thinly sliced, like for bulgogi)
- 1/2 tsp ginger juice
- 1 tsp cooking wine
- 1/2 pinch salt
Toppings
- 20g onion
- 30g zucchini (seeds removed for better texture)
- 10g carrot
- A little sesame oil
- A little green onion (chopped)
Anchovy Broth
- 600ml water
- 1 coin-type anchovy broth packet (use one with minimal additives)
- 1 Tbsp soy sauce for soup
- 1 tsp fish sauce
- 2 pinches salt

- 3 eggs
- 3 pinches salt
- A little extra virgin olive oil

Cooking Instructions
Step 1
First, in a bowl, combine the 30g of thinly sliced beef with 1/2 tsp of ginger juice, 1 tsp of cooking wine, and 1/2 pinch of salt. Gently mix and let it marinate for a short while. The ginger juice helps to tenderize the meat and remove any gamey odors, ensuring a soft texture.
Step 2
Julienne the 20g of onion, 30g of zucchini, and 10g of carrot as thinly as possible. For the zucchini, it’s best to scoop out the seeds with a spoon to prevent excess water when cooked and improve its texture. Finely chop the green onions for garnish.
Step 3
Heat a lightly oiled pan over medium heat. Add the marinated beef and stir-fry for about 2 minutes until it loses its pink color. Then, add the julienned onions, zucchini, and carrots. Sauté just until the vegetables begin to soften slightly. Be careful not to overcook, as you want to retain some of their crispness. Transfer the cooked ingredients to a separate bowl and set aside.
Step 4
Crack the 3 eggs into a bowl, add 3 pinches of salt, and whisk them thoroughly until smooth. For an even more delicate crepe, you can strain the egg mixture through a sieve.
Step 5
Preheat a non-stick pan over low heat and lightly coat with extra virgin olive oil. Pour half of the whisked egg mixture thinly into the pan to create a crepe. Cook for about 2 minutes on the first side, then flip and cook for another minute. Repeat this process to make a total of two egg crepes. Let them cool completely. It’s important to let them cool down fully before slicing, as they can break easily when warm.
Step 6
Once the egg crepes are completely cooled, use a sharp knife to slice them into very thin strips, resembling noodles. Thinly slicing them will help them integrate beautifully with the other ingredients.
Step 7
In a pot, bring 600ml of water to a boil and add 1 coin-type anchovy broth packet. Once the broth is boiling, season it with 1 Tbsp of soy sauce for soup, 1 tsp of fish sauce, and 2 pinches of salt. Using both soy sauce and fish sauce adds a deeper, more complex umami flavor. Taste and adjust the seasoning with more salt if needed, according to your preference.
Step 8
In a serving bowl, arrange the thinly sliced egg crepes at the bottom. Then, artfully place the stir-fried beef and vegetable toppings on top. Finally, pour the hot anchovy broth over everything and garnish with the chopped green onions. Your delicious noodle-free Janchi Guksu is ready! Enjoy your meal!
