  • 40g unrefined sugar
  • 1g salt
  • 35g unsalted butter, melted
  • 1 large egg, at room temperature
  • 2g baking powder
  • 85g plain yogurt
  • 70g milk
  • 15g chia seeds

Cooking Instructions

Step 1

1. To begin making the batter, crack the room-temperature egg into a mixing bowl and whisk it with the unrefined sugar until well combined. Then, incorporate the melted unsalted butter and mix until smooth.
2. In a separate bowl, combine the Geumgang wheat, baking powder, and salt. Sift these dry ingredients through a fine-mesh sieve 2-3 times. This step helps to ensure a lighter, fluffier waffle texture.
3. Gradually add the sifted dry ingredients to the egg mixture. Gently fold them in until just combined, ensuring no dry streaks of flour remain. Be careful not to overmix, as this can lead to tough waffles.
4. Finally, add the plain yogurt, milk, and chia seeds to the batter. Stir gently until all ingredients are evenly incorporated and the batter is smooth. It’s okay if there are a few small lumps.
5. Preheat your waffle maker according to the manufacturer’s instructions. Using a silicone brush, lightly coat the waffle iron grids with a bit of the melted butter. This prevents sticking and helps create a golden crust.
6. Pour about 80% of the batter onto the preheated waffle iron, avoiding overfilling. Close the lid and cook until the waffles are golden brown and cooked through.
