Healthy Oatmeal Sweet Potato Pie
No Flour! A Super Simple Healthy Diet Pie Made with Oatmeal and Sweet Potatoes
Hello, this is Nan! Happy New Year to all my neighbors! To celebrate the new year, I’ve made a sweet potato pie. This year, I’m aiming to be healthier by using sweet potatoes and oatmeal to create pies and breads. To eat healthy, I’ve opted out of using flour and instead used oatmeal and sweet potatoes. Shall we make this simple yet healthy sweet potato pie together?
Pie Dough Ingredients
- 3 medium sweet potatoes
- 400g oatmeal (approx. 2 cups)
- 2 pinches of salt
- 2 Tbsp stevia (sugar can be substituted to taste)
- 1/2 tsp baking powder
- 3 Tbsp pumpkin seeds
- 3 Tbsp raisins
- 3 Tbsp sliced almonds
Cooking Instructions
Step 1
First, wash 3 medium-sized sweet potatoes thoroughly and steam them until very soft. This should take about 20-30 minutes in a steamer. Once cooked, peel the sweet potatoes while they are still warm. Mash them using a fork or a potato masher until smooth. Mashing them while warm prevents lumps and results in a smoother texture.
Step 2
Next, prepare the oatmeal. Using a food processor or blender, grind 400g (about 2 cups) of oatmeal into a fine powder. Avoid grinding it too finely; leaving some texture will enhance the pie’s bite.
Step 3
To add moisture and flavor to the dough, prepare your fruit. Grate 1.5 apples and add both the pulp and juice to the mixture. If apples aren’t available, a ripe mashed banana (1) also works wonderfully and adds a lovely sweetness.
Step 4
In a bowl, combine the mashed sweet potato, ground oatmeal, grated apple (or banana), and 2 fresh eggs. Mix everything together with a spatula or your hands until a cohesive dough forms. Ensure all ingredients are well incorporated.
Step 5
Add 2 pinches of salt to the dough for subtle seasoning. Salt helps to enhance the natural sweetness of the other ingredients.
Step 6
For a healthy sweetness, add 2 tablespoons of stevia. If you don’t have stevia, you can use regular sugar instead. Adjust the sweetness level according to your preference.
Step 7
To ensure the pie bakes up light and fluffy, add 1/2 teaspoon of baking powder. Sifting the dry ingredients can help them mix more evenly into the batter.
Step 8
Now, let’s add nuts and dried fruits to make the pie more interesting. Feel free to use any nuts you have on hand. Add 3 tablespoons of raisins, 3 tablespoons of pumpkin seeds, and 3 tablespoons of sliced almonds to the dough and mix them in. They’ll provide a delightful crunch and nutty flavor with every bite.
Step 9
Cover the dough with plastic wrap and let it rest for about 30 minutes to 1 hour at room temperature. This resting period allows the dough to slightly rise and become more tender.
Step 10
Line your pie pan with parchment paper. This prevents the pie from sticking to the pan and makes it much easier to remove once baked.
Step 11
Spoon the rested dough into the prepared pie pan, spreading it evenly. Gently tap the bottom of the pan on your counter a few times. This releases any air bubbles within the dough, ensuring a smooth and uniform surface after baking.
Step 12
It’s time to bake! Preheat your oven or air fryer. For an oven, preheat to 200°C (400°F) for 10 minutes, then reduce the temperature to 170°C (340°F) and bake for 40 minutes. If using an air fryer, bake at 170°C (340°F) for approximately 40 minutes. The pie is ready when it’s beautifully golden brown.
Step 13
Decorate your baked sweet potato pie with cute carrot-shaped jellies as a topping. While the pie is delicious on its own, a charming topping can make it extra special.
Step 14
Enjoy your perfectly baked, crispy-on-the-outside, moist-on-the-inside healthy sweet potato pie! It pairs wonderfully with a warm cup of coffee or a cold glass of milk. This guilt-free, delicious healthy dessert will surely make your day more special.
