Main Ingredients- 100g chewy barley rice
- 1/2 cucumber, crisp
- 4 imitation crab sticks (krab), shredded
- 2 Tbsp canned sweet corn
- 1/3 bell pepper (any color), diced
- 1/2 onion, thinly sliced
- 30g carrot, finely diced
- 4 cherry tomatoes, halved
- 8 large shrimp, frozen, thawed
- 8 large lettuce leaves

First, let’s prepare the vegetables. Cut the lettuce leaves into manageable pieces, about 5cm long. Dice the carrot and bell pepper into small, uniform cubes. If using frozen shrimp, thaw them completely by soaking in cold water.

Thinly slice the onion. Gently shred the imitation crab sticks using a fork, following the grain for a tender texture. Dice the cucumber into small cubes, similar in size to the carrot and bell pepper.

Heat 1 tablespoon of olive oil in a pan over medium heat. Add the sliced onions and sauté until they become translucent and start to turn a light golden brown. This process caramelizes the onions, bringing out their natural sweetness and a delightful aroma. Once caramelized, remove from heat and set aside.
