Healthy Stir-fried Tofu Noodles with Eggplant

Main Ingredients

  • 1/2 eggplant
  • 1/2 stalk green onion
  • 1/2 onion
  • 3 cloves garlic
  • 4 Tbsp minced pork
  • 1 Cheongyang chili pepper (optional)
  • 250g tofu noodles

Seasoning

  • 1/2 Tbsp sugar
  • 2 Tbsp soy sauce
  • 1/2 Tbsp soup soy sauce (guk-ganjang)
  • 2 Tbsp mirin (rice wine)
  • 1 Tbsp plum extract
  • 1 Tbsp red pepper flakes (gochugaru)
  • 1 Tbsp oyster sauce
  • 1/2 Tbsp sesame oil (add according to preference)

Cooking Instructions

Step 1

First, thoroughly wash and pat dry the eggplant. Then, julienne it into strips about 0.5cm thick. Place the julienned eggplant into an air fryer preheated to 150°C (300°F) and cook for 10 minutes. This step helps remove excess moisture from the eggplant, preventing it from becoming watery when stir-fried and improving its texture.

Step 2

Next, thinly slice the onion and cut the green onion diagonally. If you prefer a spicy kick, deseed the Cheongyang chili pepper and mince it finely. Also, in a small bowl, combine all the ‘Seasoning’ ingredients and mix well to create your delicious sauce. Preparing the ingredients and the sauce beforehand will make the cooking process much smoother.

Step 3

Rinse the tofu noodles lightly under running water while they are in a colander. Gently pat them dry or let them drain. This simple rinse is all that’s needed to prepare them.

Step 4

Now, let’s begin stir-frying. Heat a pan over medium heat and add cooking oil. Add the sliced green onions and stir-fry until fragrant. Frying the green onions well will enhance the overall flavor of the dish.

Step 5

Once you hear a sizzling sound from the green onions, add the minced pork. Break up the pork with a spatula as it cooks, and stir-fry until it is no longer pink and fully cooked through.

Step 6

When the pork is cooked, add the pre-air-fried eggplant, onion, and Cheongyang chili pepper (if using) to the pan. Pour in the prepared sauce and add 1/2 cup of water. Stir-fry everything together, allowing the ingredients to absorb the sauce. Cooking over medium-high heat helps maintain the crispness of the vegetables.

Step 7

Once the vegetables are tender-crisp and the sauce has slightly thickened, add the prepared tofu noodles. Gently toss everything together to coat the noodles with the sauce, and stir-fry for another 1-2 minutes. Your delicious stir-fried tofu noodles with eggplant are now ready! For an extra touch of flavor, drizzle with a little sesame oil before serving.
