Ingredients- 3 medium tomatoes
- 1/2 each of red, yellow, and green bell peppers
- 1 Tbsp mashed tofu (or to your preference)
- 3 Tbsp mozzarella cheese (or to your preference)

First, prepare the soft tofu that will be used instead of rice. Mash the tofu thoroughly with a fork or your hands until smooth. Set aside the mashed tofu, ready to fill the tomato cups.

Prepare the fresh tomatoes. Slice off the top of each tomato flatly to create a stable base for the cup shape. Then, using a spoon, carefully scoop out the seeds and pulp to hollow out the inside. Be gentle to avoid breaking the tomatoes.

Combine the scooped-out tomato pulp and the pre-mashed tofu in a bowl and mix well. You can add a pinch of pepper or herbs to taste. For an extra layer of flavor, mix in some mozzarella cheese with the filling.
