As a frequent cook of eggs, a staple in many Korean households, I wanted to try something a little different. This recipe takes a bit of finesse, but it’s worth it for a special occasion! It’s a delightful way to add a touch of flair to your meal.

Ingredients

  • 7 eggs
  • 1/2 onion
  • 1/4 carrot
  • 3 green onions (scallions)
  • 1 green chili pepper
  • 1 red chili pepper
  • 2 cloves garlic
  • 1/2 can Spam

  • 1/2 tsp salt

Cooking Instructions

Crack 7 eggs into two separate bowls, separating the whites and yolks. Mix each bowl thoroughly.

Finely mince the onion, carrot, green onions, chili peppers, and garlic. Green onions are preferable for a better color, but regular green onions will work if that’s what you have. Feel free to use any leftover vegetables you have on hand.

Cut the Spam into approximately 0.5cm thick slices (two slices needed). Lightly pan-fry the Spam slices. In the bowl with the egg whites, add the minced vegetables and 1/2 tsp salt, and mix well. Pour a thin layer of the egg white mixture onto a preheated, lightly oiled pan. Place the two pan-fried Spam slices side-by-side on top of the cooked egg white.

While the egg mixture is still unset, carefully roll it up tightly around the Spam. It’s important to roll it firmly to prevent the Spam from falling out.

Place the rolled egg mixture on its side in the pan and roll it around to cook evenly. This ensures the egg roll is cooked through and maintains a nice shape.

Once the egg white mixture is used up, prepare the yolk mixture. Pour a thin layer of the egg yolk mixture onto the pan. Place the cooked Spam and egg white roll in the center of the yolk layer.

Gently roll the yolk mixture around the existing roll. Again, roll it tightly to secure the shape. Transfer the finished egg roll to a cutting board and let it cool slightly before slicing it into desired pieces.

Now, let’s create the heart shape! Slice the egg roll diagonally into pieces about 1.5cm thick. Gently press the center of each slice to create a slight indentation, then press two slices together with the cut sides facing each other to form a heart shape. (Alternatively, you can cut the egg roll in half lengthwise, lay it flat with the cut side up, and then gently press the ends inward to meet in the center, mimicking a heart shape.)
