A Simple and Delicious Egg Udon Noodle Recipe
Enjoy a comforting bowl of egg udon noodles made with a rich kelp and anchovy broth, enriched with fluffy, whisked eggs. This recipe is perfect for a quick, satisfying meal that everyone, from children to adults, can enjoy. For a spicier kick, feel free to add a pinch of chili powder or some chopped fresh chili peppers.
Main Ingredients
- 2 fresh eggs
- 1/4 tsp herb salt
- 1 stalk green onion
- 3 cups kelp and anchovy broth
- 1 portion (approx. 200g) udon noodles
Cooking Instructions
Step 1
First, crack 2 fresh eggs into a bowl. Add 1/4 teaspoon of herb salt and the finely chopped green parts of 1 stalk of green onion. Whisk everything together gently with a fork or whisk until well combined to prepare the egg mixture.
Step 2
In a pot or a small earthenware pot (ttukbaegi), add the finely chopped white parts of the green onion. Pour in 3 cups of kelp and anchovy broth. This broth is key to the deep flavor of the udon, so make sure you have enough.
Step 3
Add 1 and 1/2 tablespoons of soup soy sauce for umami. You can adjust the amount of soy sauce to your taste. Now, place the pot with all the ingredients on the stove and bring it to a boil.
Step 4
Once the broth is at a rolling boil, add 1 portion (about 200g) of udon noodles to the pot. It’s important to loosen the noodles right away so they don’t stick together.
Step 5
Gently stir the noodles with a spoon to prevent them from breaking or clumping, and let them cook. Be careful not to let the noodles stick to the bottom of the pot. Cook for about 2-3 minutes, or until the noodles are loosened and cooked through.
Step 6
When the udon noodles are cooked and the broth comes back to a boil, slowly drizzle the prepared egg mixture around the edges of the pot. To ensure the egg cooks into delicate strands rather than a solid mass, gently stir the bottom of the pot with chopsticks or a spoon as you pour. Continue stirring gently until the egg is cooked to your liking. Your delicious egg udon is now ready to enjoy!
