A simple yet satisfying noodle dish with a wonderfully flavorful broth, perfect for any day. This recipe is quick to make and incredibly comforting.
Main Ingredients- Noodles for 2 servings
- 1 ‘Mankae Han Al’ (all-in-one broth cube)
- 1/2 medium onion
- 1/3 medium carrot
- 1/2 medium zucchini
Broth Seasoning- 2 Tbsp Korean soup soy sauce (Guk-ganjang)
- Pinch of black pepper

Cooking Instructions
Step 1
Make the Broth: In a pot, combine 1 liter of water, 1 ‘Mankae Han Al’ broth cube, and the white part of a leek. Bring to a boil over high heat. Once boiling, reduce to medium-low heat and simmer for about 5 minutes to develop a deep flavor.
Step 2
Prepare the Vegetables: Wash and prepare 1/3 zucchini, 1/2 onion, and 1/3 carrot. Using a mandoline slicer or a knife, julienne all the vegetables thinly. Reserve a little extra zucchini for the topping.

Cook Vegetables and Simmer Broth: Bring the prepared broth back to a simmer. Add the julienned zucchini (for the broth), onion, and carrot. Cook for another 2-3 minutes until the vegetables are tender.

Season the Broth: Add 2 tablespoons of Korean soup soy sauce to the simmering broth. Season with a pinch of salt and a dash of black pepper to your taste. Adjust the seasoning for a clear and rich broth flavor.

Make the Egg Garnish: Crack 2 eggs into a cup and whisk well. Heat a lightly oiled pan over low heat. Pour a thin layer of the egg mixture and cook until set. Once cooked, remove from the pan, let it cool slightly, then thinly julienne for garnish.

Sauté Zucchini Topping: Take the reserved julienned zucchini. Heat a lightly oiled pan over low heat. Add the zucchini and a pinch of salt, and sauté briefly until slightly softened but still crisp. Avoid overcooking to maintain a pleasant crunch.

Cook the Noodles: In a large pot of boiling water, add the noodles for 2 servings. Stir gently to prevent sticking and cook for 3-4 minutes, or until al dente. Drain the noodles immediately and rinse them under cold running water to remove excess starch. This step ensures the noodles are perfectly chewy.
