Main Ingredients

  • Noodles for 2 servings
  • 1 ‘Mankae Han Al’ (all-in-one broth cube)
  • 1/2 medium onion
  • 1/3 medium carrot
  • 1/2 medium zucchini

Broth Seasoning

  • 2 Tbsp Korean soup soy sauce (Guk-ganjang)
  • Pinch of black pepper

Toppings

  • 2 large eggs
  • Small amount of zucchini (for topping)
  • A piece of white part of leek (for broth)

Cooking Instructions

Step 1

Make the Broth: In a pot, combine 1 liter of water, 1 ‘Mankae Han Al’ broth cube, and the white part of a leek. Bring to a boil over high heat. Once boiling, reduce to medium-low heat and simmer for about 5 minutes to develop a deep flavor.

Step 1

Step 2

Prepare the Vegetables: Wash and prepare 1/3 zucchini, 1/2 onion, and 1/3 carrot. Using a mandoline slicer or a knife, julienne all the vegetables thinly. Reserve a little extra zucchini for the topping.

Step 2

Step 3

Cook Vegetables and Simmer Broth: Bring the prepared broth back to a simmer. Add the julienned zucchini (for the broth), onion, and carrot. Cook for another 2-3 minutes until the vegetables are tender.

Step 3

Step 4

Season the Broth: Add 2 tablespoons of Korean soup soy sauce to the simmering broth. Season with a pinch of salt and a dash of black pepper to your taste. Adjust the seasoning for a clear and rich broth flavor.

Step 4

Step 5

Make the Egg Garnish: Crack 2 eggs into a cup and whisk well. Heat a lightly oiled pan over low heat. Pour a thin layer of the egg mixture and cook until set. Once cooked, remove from the pan, let it cool slightly, then thinly julienne for garnish.

Step 5

Step 6

Sauté Zucchini Topping: Take the reserved julienned zucchini. Heat a lightly oiled pan over low heat. Add the zucchini and a pinch of salt, and sauté briefly until slightly softened but still crisp. Avoid overcooking to maintain a pleasant crunch.

Step 6

Step 7

Cook the Noodles: In a large pot of boiling water, add the noodles for 2 servings. Stir gently to prevent sticking and cook for 3-4 minutes, or until al dente. Drain the noodles immediately and rinse them under cold running water to remove excess starch. This step ensures the noodles are perfectly chewy.

Step 7

Step 8

Assemble and Serve: Place the cooked noodles in a serving bowl. Ladle the hot, flavorful broth generously over the noodles. Arrange the prepared egg garnish and sautéed zucchini on top for a beautiful presentation. Enjoy your delicious Janchi Guksu immediately while it’s warm!
