  • 1/2 block firm tofu (approx. 150g)
  • 1 medium potato
  • A small amount of green onion, finely chopped
  • 1/2 Korean chili pepper, finely chopped (optional)
  • 1 egg

Seasoning & Broth

  • 2 Tbsp soy sauce for soup (Guk-ganjang)
  • Pinch of black pepper
  • 1/2 Tbsp minced garlic
  • Salt to taste

Cooking Instructions

Prepare all your ingredients. Peel the potato and cut it into bite-sized cubes. Dice the tofu similarly. Finely chop the green onion and Korean chili pepper. Crack the egg into a small bowl and lightly whisk it.

In a pot, combine the cubed potatoes and a little water (or anchovy broth). Bring to a simmer over medium heat. Once the potatoes begin to soften slightly, add a pinch of black pepper to eliminate any gamey odors. Cooking the potatoes first helps create a clearer, fresher broth.

Once the broth starts boiling, stir in 2 tablespoons of soy sauce for soup (Guk-ganjang) and 1/2 tablespoon of minced garlic. Then, add the diced tofu and let it simmer for a few minutes.
