Hearty Anchovy Broth Rice Cake and Dumpling Soup (Tteok Mandu Guk)
Simple and Refreshing Tteok Mandu Guk Recipe Using Anchovy Broth
Perfect for those days when you don’t feel like cooking a full meal! Tteok Mandu Guk, featuring chewy rice cakes and delicious dumplings, is a satisfying meal. While it’s also tasty with beef bone broth (sagol), I sometimes crave a lighter, cleaner flavor, which is why I love making it with anchovy broth. This recipe offers a wonderfully clean and refreshing taste!
Main Ingredients- 1-2 handfuls (approx. 200g) sliced rice cakes for soup (tteokguk tteok)
- 10-15 dumplings (mandu) – choose your favorite kind (e.g., meat or kimchi)
Cooking Instructions
Step 1
First, let’s make a delicious anchovy and kelp broth. In a pot, add 1.5 liters of water, 10 dried anchovies, and 1 piece of dried kelp. Bring to a boil over medium heat and simmer for about 20-30 minutes to extract a rich, flavorful broth. Remove the kelp once the water starts boiling to prevent a bitter taste.
Step 2
If your rice cakes are frozen, soak them in cold water for about 5 minutes to soften them. This prevents them from clumping and ensures they cook up tender and chewy.
Step 3
Once the anchovy and kelp broth is well-infused, strain out the solids (anchovies and kelp) using a sieve, leaving only the clean broth. Bring the broth back to a boil, then add the dumplings. Cook until the dumplings float to the surface.

Add 2 tablespoons of soup soy sauce and 1/2 tablespoon of minced garlic to the pot. This will add depth and savory flavor to the soup. Adding soup soy sauce first helps give the broth a richer color.

Add the prepared rice cakes to the pot and cook until they are soft and chewy. Taste the soup and add a pinch of salt if needed to adjust the seasoning to your preference. Next, whisk 1-2 eggs in a bowl and slowly drizzle them into the simmering soup along the edges of the pot. Avoid stirring immediately; let the egg cook and set into delicate ribbons.

Finally, garnish generously with finely chopped green onions. (If you have scallions, they work beautifully too!) The fresh aroma of green onions will enhance the overall flavor of your Tteok Mandu Guk.
