Introducing a recipe that perfectly balances taste and nutrition with the fantastic combination of aged kimchi from your fridge and savory bacon. Essential Ingredients
- About 10 pieces of well-fermented kimchi (including kimchi juice)
- 1/2 Onion
- 3 strips of streaky bacon
- 1 bowl of warm rice
- 1 Tbsp Soy sauce
- 1 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Kimchi juice
- 1 Tbsp Sesame oil
- 1/2 Tbsp Sugar
Cooking Instructions
Step 1
First, prepare the kimchi. Finely mince the kimchi into pieces about 1cm in size. Heat a pan over medium-low heat, add the minced kimchi and 1 Tbsp of sesame oil, and stir-fry. The sesame oil will coat the kimchi, removing any raw kimchi smell and enhancing its savory flavor.
Step 2
Once the kimchi becomes translucent and well-coated with sesame oil, add the bacon cut into bite-sized pieces (about 1cm) and stir-fry together. The fat rendered from the bacon will add richness and flavor to the kimchi. Fry until the bacon is nicely browned.
Step 3
When the bacon is cooked, add the finely chopped 1/2 onion (peeled) and stir-fry until it becomes translucent. The sweetness of the onion will harmonize with the sourness of the kimchi, elevating the overall flavor of the fried rice.

Once all the vegetables are cooked, add 1 bowl of warm rice to the pan. Use a spatula to break up any clumps of rice. Then, add 1 Tbsp soy sauce, 1 Tbsp gochugaru, 2 Tbsp kimchi juice, and 1/2 Tbsp sugar. Stir-fry quickly over high heat.
