Ingredients- Tofu: 150g (about half of a standard 300g block)
- Frozen Banana: 1 (medium-sized)
- Milk: 200ml
- Mixed Nuts: 1 handful (e.g., almonds, walnuts, or your favorite)
- Erythritol: 1 Tbsp (or other sweetener of choice)
- Salt: A pinch
Cooking Instructions
Step 1
Prepare 150g of tofu. Most standard tofu blocks are around 300g, so you’ll use about half of one block. Cut it into cubes for easier blending.
Step 2
Gently blanch the tofu in boiling water for about 2 minutes. This helps to remove any raw tofu taste and makes the texture smoother. Alternatively, you can microwave it for 2 minutes, or use silken tofu that is safe to consume raw.

After blanching, rinse the tofu under cold running water, then immerse it in ice water to cool it down thoroughly. This step firms up the tofu slightly and helps keep the shake cold.

Cut 1 banana into smaller pieces. For convenience, peel the banana before freezing it and store it in an airtight container or zip-top bag. Frozen banana will give your shake a wonderfully cold and creamy texture.

Combine the chilled tofu, chopped frozen banana, and a handful of mixed nuts in your blender. Pour in 200ml of milk. Add 1 tablespoon of erythritol for sweetness (you can adjust this or use sugar/honey as a substitute).
