On days when you don’t feel like cooking a full meal or find side dishes troublesome, this hearty and simple tteokguk (rice cake soup) is perfect for a cold day. Made with tender beef and flavorful kimchi dumplings, it’s a comforting dish that warms you from the inside out.

Main Ingredients

  • 300g Tteokguk Rice Cakes
  • 200g Beef (for soup)
  • 500g Kimchi Dumplings
  • 500g Store-bought Beef Bone Broth
  • 1 Green Onion

Seasoning

  • 1 Tbsp Soy Sauce for Soup (or 1 tsp Salt)
  • 1 tsp Minced Garlic
  • Pinch of Ground Black Pepper

Cooking Instructions

Prepare the tteokguk rice cakes (300g). To prevent them from sticking together, soak them in cold water for about 10-20 minutes. This will soften the rice cakes and help prevent them from breaking apart during cooking.

Prepare the beef (200g), cut into bite-sized pieces suitable for soup. Gently pat it dry with paper towels to remove excess blood for a clearer broth. If desired, you can further slice it into smaller pieces.

In a pot, combine the store-bought beef bone broth (500g) and 1L of water. Bring to a rolling boil over high heat. Once boiling vigorously, add the prepared beef and cook until it’s no longer pink. You can remove the cooked beef, or leave it in the pot.

Wash the green onion (1 stalk) thoroughly, separating the white and green parts. Slice it thinly on an angle. Finely chopped green onion adds a lovely garnish and enhances the soup’s flavor.

Prepare the kimchi dumplings (500g). If they are frozen, take them out beforehand to thaw slightly. Partially thawed dumplings are less likely to burst when added to the boiling soup and will cook through more evenly.

Once the broth with the beef is boiling vigorously again, drain the soaked tteokguk rice cakes and add them to the pot. Stir gently to prevent them from sticking to the bottom.

As the rice cakes begin to float to the surface, get ready to add the dumplings. They will naturally rise as they cook and become tender.

Carefully add the prepared kimchi dumplings to the pot. Gently push them down to submerge them in the broth.

Finally, add the sliced green onions, minced garlic (1 tsp), soy sauce for soup (or salt) (1 Tbsp), and a pinch of ground black pepper to season. Let the soup simmer vigorously for about 10 minutes, or until the dumplings are all floating and the rice cakes are soft and chewy. Your delicious beef and kimchi dumpling tteokguk is ready! For an extra touch, you can garnish with thinly sliced egg crepes or a sprinkle of seaweed flakes.
