Hearty and Delicious Beef and Mushroom Soup

This time, let’s make a hearty beef and mushroom soup along with delicious steamed tofu and wraps. This soup, with its tender beef, aromatic mushrooms, and refreshing vegetables, is a favorite for all ages.
Steamed Tofu Wraps- 1/2 block Firm Tofu
- 1/4 head Cabbage
- Ssam-cabbage (lettuce wraps) as needed
- Ssamjang (spicy dipping sauce) to taste
- Guk-ganjang (soup soy sauce) or Jin-ganjang (regular soy sauce) to taste
Beef and Mushroom Soup- 100g Beef (for soup, cut into bite-sized pieces)
- 50g Bean Sprouts
- 3 Shiitake Mushrooms
- 1 pack Enoki Mushrooms
- 50g Oyster Mushrooms
- 50g Dried Bracken (fern) (or cooked bracken)
- 1 piece (large slice) Daikon Radish
- 1 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 2 Green Chili Peppers
- 4 cups Anchovy Broth (or kelp broth)
- 100g Beef (for soup, cut into bite-sized pieces)
- 50g Bean Sprouts
- 3 Shiitake Mushrooms
- 1 pack Enoki Mushrooms
- 50g Oyster Mushrooms
- 50g Dried Bracken (fern) (or cooked bracken)
- 1 piece (large slice) Daikon Radish
- 1 Tbsp Soy Sauce (Guk-ganjang or Jin-ganjang)
- 2 Green Chili Peppers
- 4 cups Anchovy Broth (or kelp broth)
Cooking Instructions
Step 1
Prepare the vegetables for the steamed tofu wraps. Remove the core from the cabbage and cut it into large pieces. Steam it in a steamer basket until tender. Wash the ssam-cabbage thoroughly and pat it dry. While the cabbage is steaming, we’ll prepare the other ingredients.
Step 2
Cut the tofu into bite-sized pieces (about 2-3 cm thick). Place the cut tofu on a microwave-safe plate and heat for 2-3 minutes to serve it warm. Having accompaniments like spicy wraps or dipping sauces ready will make the meal even better.
Step 3
Now, let’s make the delicious beef and mushroom soup! Pour 4 cups of anchovy broth into a pot and bring it to a boil. Once boiling, add the large pieces of daikon radish and the beef for soup. Reduce the heat to medium, cover, and simmer for about 10-15 minutes until the beef is tender. Skim off any foam that rises to the surface for a clearer broth.
Step 4
Once the beef and radish are tender, add the prepared mushrooms (shiitake, enoki, oyster) and the soaked bracken and bean sprouts. After the mushrooms and vegetables are cooked, season the soup with 1 tablespoon of soy sauce. Finally, add the finely chopped green chili peppers for a bit of spiciness, and it’s ready! You can add salt or pepper to taste. Enjoy this warm soup with a bowl of rice!
