Main Ingredients- 300g Ground Beef
- 2 stalks Green Onions
- 2 Onions
- 1 Zucchini
- 1 Tbsp Minced Garlic (for sautéing)
- 1 handful Whole Garlic Cloves (thinly sliced)
- 2 Tbsp Oyster Sauce
- 5 Cheongyang Peppers (finely chopped)
- Slurry (3 Tbsp Cornstarch + 3 Tbsp Water)
Seasoning Ingredients- 2 Tbsp Homemade Doenjang (Soybean Paste)
- 1 Tbsp Gochujang (Chili Paste)
- 1 Tbsp Minced Garlic (for seasoning)
- 1 Tbsp Dadam Doenjang Jjigae Doenjang (or regular doenjang)
- 1 Tbsp Chicken Stock (or 1 Tbsp Anchovy-Kelp Broth)
- 2 Tbsp Homemade Doenjang (Soybean Paste)
- 1 Tbsp Gochujang (Chili Paste)
- 1 Tbsp Minced Garlic (for seasoning)
- 1 Tbsp Dadam Doenjang Jjigae Doenjang (or regular doenjang)
- 1 Tbsp Chicken Stock (or 1 Tbsp Anchovy-Kelp Broth)
Cooking Instructions
Step 1
First, prepare your anchovy broth. In a pot, combine water, dried anchovies, and kelp, then simmer to create a flavorful broth. (If unavailable, you can use store-bought broth or plain water.)
Step 2
In a bowl, place the ground beef. Add 2 Tbsp oyster sauce and 1 Tbsp minced garlic, then mix well and let it marinate for a short while. This will infuse the beef with flavor.
Step 3
In a separate bowl, combine 2 Tbsp homemade doenjang, 1 Tbsp gochujang, 1 Tbsp minced garlic, 1 Tbsp Dadam Doenjang Jjigae Doenjang, and 1 Tbsp chicken stock. Mix thoroughly to create a delicious seasoning paste. Set aside.
Step 4
Finely chop the green onions and onions. Thinly slice the whole garlic cloves. Heat a pan with a generous amount of cooking oil over medium-low heat. Add the chopped green onions, sliced garlic, and onions, and sauté until fragrant, being careful not to burn them. This step builds a wonderful aromatic base.
Step 5
Add the marinated ground beef to the pan and stir-fry. Break up any clumps of beef as you cook. To prevent sticking, add a little more cooking oil intermittently. Cook until the beef is just cooked through.

Add the prepared seasoning paste to the pan and stir well with the beef. Continue to cook for about 1-2 minutes to allow the flavors to meld together.

Dice the zucchini into bite-sized pieces and finely chop the Cheongyang peppers. Add them to the pan and stir-fry along with the other ingredients. Cook until the zucchini is slightly translucent.
Step 8
Pour in the prepared anchovy broth to cover the ingredients generously. Bring to a boil, then reduce the heat to low and simmer until the flavors have melded. To achieve the desired consistency, gradually add the cornstarch slurry (3 Tbsp cornstarch mixed with 3 Tbsp water), stirring until the stew becomes slightly thickened.
