- 300g Beef (for Bulgogi)
- 2/3 Carrot
- 2/3 Zucchini
- 5 Shiitake Mushrooms
- 1/2 Onion

Cooking Instructions
Step 1
First, meticulously prepare all the ingredients for your dish. For the beef, aim for about 100g of bulgogi-cut meat per serving. A small pack of fresh baby leaf greens, typically found at the grocery store, is usually enough for about 3 servings. If you prefer a spicier taste, prepare the ‘Gochujang Sauce,’ or if you like a milder, savory flavor, choose the ‘Soy Sauce Dressing.’ You can even make both to suit your mood! If you’re cooking for two, slightly reduce the amount of beef and vegetables, but you can use the remaining sauce ingredients as listed.
Step 2
Cut the prepared beef into bite-sized pieces, making them easy to eat. Aim for pieces that are not too small, so you can enjoy a satisfying chew.
Step 3
If there’s any remaining blood in the beef, gently pat it dry with paper towels. Removing the blood is key to achieving a clean and pure flavor without any gamey smell. Place the beef on paper towels and lightly press to absorb the moisture.
Step 4
In a medium bowl, combine all the beef marinating ingredients. Add 2 Tbsp soy sauce, 1 Tbsp mirin, 1 Tbsp sugar, 1/2 Tbsp minced garlic, 1 Tbsp sesame oil, and a pinch of black pepper. Stir well until the ingredients are thoroughly mixed to create the marinade.

Add the patted-dry beef to the prepared marinade. Gently massage the marinade into the meat with your hands to ensure it’s evenly coated. Then, let the beef marinate in the refrigerator for about 20 minutes. This resting period will make the beef more tender and infuse it with deeper flavor.

While the beef is marinating, let’s prepare the fresh vegetables! Peel the zucchini and carrot using a peeler, then cut them into approximately 4cm lengths and thinly julienne them. Thinly julienne the onion and shiitake mushrooms (after removing the tough stems) as well. Rinse the baby leaf greens under cool running water and thoroughly drain them by placing them in a colander. Ensuring they are dry will prevent the bibimbap from becoming watery when mixed.
Step 7
Heat 1 Tbsp of cooking oil in a skillet over medium heat. Add the julienned onions first. Sprinkle a tiny pinch of salt over the onions; this will enhance their natural sweetness. Sauté the onions for about 1-2 minutes until they become translucent, making sure they don’t burn.

Remove the sautéed onions from the pan and set them aside. Now, stir-fry the zucchini, carrots, and shiitake mushrooms in the same pan, adding them in that order. If the pan seems dry, add a little more cooking oil as needed to prevent the vegetables from sticking. Sauté each vegetable until it’s tender-crisp, avoiding overcooking to maintain a pleasant texture.
Step 9
Lightly wipe out the pan used for the vegetables, or use it as is. Now, crack the eggs into the pan and fry them sunny-side up, aiming for a soft yolk that will burst when mixed. This adds a rich creaminess to the bibimbap.

In the same pan where you cooked the egg, add the marinated beef. Stir-fry the beef until its pink color completely disappears and it’s fully cooked through. Be careful not to overcook, as this can make the beef tough.

Now it’s time to prepare your chosen sauce for mixing! You can opt for the spicy gochujang sauce, the savory soy sauce dressing, or make both if you like. The ingredient quantities below are for one serving:
– Gochujang Sauce: 2 Tbsp Gochujang, 1 Tbsp Oligodang, 1/2 Tbsp Sesame Oil
– Soy Sauce Dressing: 1 Tbsp Soy Sauce, 1/2 Tbsp Oligodang, 1 Tbsp Mirin, 1/2 Tbsp Sesame Oil, Pinch of Toasted Sesame Seeds
