Hearty and Delicious Bulgogi Tortilla Pizza

Prepare a generous batch of pizza filling, and you can make various dishes like tortilla pizza, quesadillas, burritos, and gratins! Packed with vegetables for great satiety, this recipe also helps reduce carbohydrate intake with a single thin tortilla, making it perfect for healthy eating. It’s also economical when you use up leftover vegetables from your fridge. Adding cabbage or cauliflower will further enhance the texture and nutrition. I used tender Korean beef tenderloin for this bulgogi pizza, but chicken breast or ground pork stir-fried with the filling is also incredibly delicious!
Main Ingredients- Korean Beef Tenderloin (Udun-sal) 2 strips (approx. 150-200g)
- Onion 1/2
- Carrot 1/3
- Small Tomato or Cherry Tomatoes 1
- Bell Pepper 1/2
- Green Pepper 1/3
- Mushrooms A handful
- Garlic 3 cloves
- Tortilla 1 sheet
- Mozzarella Cheese A handful (approx. 30-40g)
- Black Olives 2
Seasoning- Store-bought Tomato Sauce 4 Tbsp
- Sriracha Sauce 2 Tbsp (adjust to taste)
- Curry Cube 1/2 block (approx. 10-15g, optional)

Cooking Instructions
Step 1
First, prepare the vegetables for the pizza filling. Dice the bell pepper, green pepper, and tomato into small, bite-sized pieces after removing the seeds. Slice the mushrooms into manageable pieces as well. (If you’re adding cabbage or cauliflower, shred or finely chop them.)
Step 2
Finely chop the onion and carrot into pieces similar in size to the other vegetables. Mince the garlic cloves.
Step 3
Heat a little oil in a wide pan over medium heat. Add the chopped onion and begin to sauté. (Do not add salt at this stage; the sauce will provide sufficient flavor.)
Step 4
Once the onions become translucent and start to develop a light brown color around the edges, add the minced garlic and continue to stir-fry together. Cook until fragrant, being careful not to burn the garlic.
Step 5
When the garlic aroma is released, add the chopped carrots and sauté them until they begin to soften slightly.
Step 6
When the carrots are about halfway cooked, add all the vegetables prepared in step 1 (bell pepper, green pepper, tomato, mushrooms) and stir-fry until they wilt. It’s good if the tomatoes cook down and break apart, as this enriches the sauce.

Once the vegetables are sautéed, add 4 tablespoons of store-bought tomato sauce.
Step 8
Next, add 2 tablespoons of Sriracha sauce. If you prefer more heat, feel free to increase the amount of Sriracha sauce.

The current amount of sauce is a guideline for the specified vegetable quantity. You can adjust the sauce amount to your preference. Stir-fry, taste, and add more Sriracha if desired.

Add 1/2 curry cube and stir it into the mixture until well combined with the sauce and vegetables. The curry adds a wonderful depth of flavor, but the dish will still be delicious without it.

Continue to cook until the mixture becomes thick and well-combined, creating a delicious pizza filling. (If you omit the curry, the filling can be slightly more saucy than pictured.)

Wash a pan and lightly grease it with olive oil. Sear the Korean beef tenderloin without any salt until cooked through. Tenderloin is lean and an excellent source of protein.

The tenderloin cooks quickly, so be careful not to overcook it, which can make it tough. (For reference, Korean beef tenderloin has about 132 calories per 100g, making it a great choice for those watching their intake.)
Step 14
Now, let’s assemble the Bulgogi Burrito. Place a generous amount of the prepared filling onto the tortilla, followed by half of the cooked beef tenderloin strips.

Sprinkle about a tablespoon of mozzarella cheese over the filling.

Fold in both ends of the tortilla towards the center to secure the filling.

Roll the tortilla tightly from the bottom, ensuring the filling stays inside. Lightly dampen the edge with water to seal the seam and place it seam-side down.

Next, let’s make the Bulgogi Pizza. Spread the prepared filling evenly over the 15cm tortilla, reaching close to the edges.

Arrange the remaining one and a half strips of cooked beef tenderloin attractively on top.

Generously sprinkle a handful of mozzarella cheese over the beef and top with sliced black olives.
Step 21
Cook in an air fryer at 170°C (340°F) for 8 minutes. If you don’t have an air fryer, you can cook it in a dry skillet over low heat with a lid on until the cheese is melted and the tortilla is crispy.
Step 22
The pizza is best when the cheese is golden and slightly browned. Adjust the cooking time as needed.
Step 23
Cut the finished Bulgogi Pizza into 6 slices and garnish with a sprinkle of parsley, if desired. The burrito can be cut in half, but for smaller tortillas, it’s perfectly fine to enjoy it whole! ^^
