Main Ingredients
  • 1 large sweet potato
  • 300g chicken breast
  • 1/2 onion
  • 1/2 stalk of green onion (scallion)
  • 1 red chili pepper

Seasoning
  • 1 Tbsp soy sauce
  • 1 Tbsp oyster sauce
  • 1 Tbsp minced garlic
  • Black sesame seeds (for garnish)
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, peel the sweet potato and cut it into bite-sized cubes, about 1.5 cm. Avoid cutting them too thick, as this will increase cooking time. Lightly grease a wok (or a deep frying pan) with oil and add the cubed sweet potatoes. Stir-fry over medium heat. Cover the pan with a lid for a few minutes to help the sweet potatoes cook through.

Step 2

Prepare the chicken breast according to your preference. The image shows chicken breast with added curry flavor, but plain, unseasoned chicken breast works perfectly fine too. If using raw chicken breast, cut it into bite-sized pieces.

Step 3

Chop the green onion (scallion) into generous pieces. Adding plenty of green onions to stir-fries enhances the aromatic flavor and balances any richness.

Step 4

Once the sweet potatoes are partially cooked, add the prepared chicken breast to the wok and continue to stir-fry. Make sure to break up any clumps of chicken breast as you cook.

Step 5

Add the finely chopped purple onion (or regular onion) to the wok with the chicken and sweet potatoes. Cover the pan and let it cook for a bit longer until the onions soften.

Step 6

When the ingredients are mostly cooked, add all the prepared seasonings: oyster sauce, soy sauce, and minced garlic. Increase the heat to high and stir-fry to allow the sauce to coat the ingredients evenly. Cook until most of the liquid has evaporated, then toss in the chopped green onions and mix gently.

Step 7

Finely julienne the red chili pepper and sprinkle it over the top as a garnish. The red chili adds a hint of spice and a vibrant splash of color, making the dish visually appealing.
