Main Ingredients

  • 6 Potatoes (medium-sized)
  • 4-5 Eggs
  • 1/2 Onion (small)
  • 1-2 loaves of Bread
  • Strawberry jam, to taste (optional)
  • Mayonnaise, generously (approx. 5-7 tbsp, for consistency)
  • Black pepper, to taste
  • Salt, to taste
  • Sugar, to taste (for added sweetness, optional)

Cooking Instructions

Step 1

First, let’s boil the eggs. Fill a pot with enough water to cover the eggs and add a pinch of salt. Once the water boils, carefully place the eggs in the pot and boil them for about 15 minutes until hard-boiled. This ensures the yolks are firm and perfect for the sandwich filling.

Step 1

Step 2

Rinse the boiled eggs under cold water to cool them down, then peel them. Now, we’ll separate the yolks and whites. For a smoother sandwich filling, set the yolks aside for now, and finely chop the egg whites.

Step 2

Step 3

Cut the potatoes into large pieces and place them in a pot with their skins on. Add enough water to cover the potatoes completely, along with a pinch of salt. Boil for about 30-40 minutes, or until the potatoes are tender enough to be easily mashed with a fork. Drain the cooked potatoes thoroughly.

Step 3

Step 4

Finely chop the ingredients. Alongside the boiled egg whites, finely chop the onion. If you’re adding imitation crab sticks or ham, chop them finely at this stage as well. These chopped ingredients will add richness to the sandwich filling.

Step 4

Step 5

Place the hot mashed potatoes and the egg yolks in a bowl. Add salt, pepper, and a little sugar to taste into the bowl with the potatoes and yolks. It’s best to mash them while they’re still warm to achieve a smooth, lump-free consistency.

Step 5

Step 6

Using a fork, thoroughly mash the potatoes and egg yolks. It’s crucial to create a smooth potato salad base without any lumps. This step might be a bit tiring for your arms, but keep going for that delicious sandwich!

Step 6

Step 7

To the mashed potato and yolk base, add the finely chopped egg whites, onion, and any additional ingredients like imitation crab sticks or ham you’ve prepared. Mix everything together thoroughly, giving it a good ‘shake, shake’ to combine all the ingredients well.

Step 7

Step 8

Now it’s time to add the star ingredient for the sandwich filling: mayonnaise. Mayonnaise will bind the flavors together and add a creamy texture.

Step 8

Step 9

Generously add the mayonnaise. I used quite a bit since I made a larger batch. About 5-7 tablespoons are usually sufficient, but feel free to adjust to your preference. (I recommend about three good squeezes!).

Step 9

Step 10

Add a pinch of black pepper to enhance the flavor. While it’s already seasoned, a touch of black pepper will add more depth to the sandwich. Adjust to your liking.

Step 10

Step 11

Continuously mix all the ingredients with the mayonnaise until smooth and creamy. To prevent the sandwich filling from becoming too dry, add a little more mayonnaise gradually while mixing, ensuring you achieve a thick and creamy consistency without making it too runny. Your delicious potato salad filling is now ready!

Step 11

Step 12

Let’s assemble the sandwich! Use a knife to neatly trim off the crusts from the bread slices. Spread a thin layer of strawberry jam on one side of a bread slice. The sweetness of the jam will add a refreshing touch to the sandwich. Then, place a slice of cheese on top.

Step 12

Step 13

Generously pile the prepared egg potato salad on top of the cheese, making it nice and thick. A thicker layer of salad will make the sandwich even more hearty and delicious.

Step 13

Step 14

Finally, top with another slice of bread to complete the sandwich. Gently press down to ensure the filling stays in place.

Step 14

Step 15

Cut the sandwich in half for easy handling. Using a serrated knife or a sharp knife, cut it in half to reveal the beautifully filled interior.

Step 15

Step 16

Ta-da! Your delicious Egg Potato Sandwich is complete! Make this appetizing and incredibly tasty sandwich yourself. Doesn’t it look great to show off?

Step 16

Step 17

Filling the sandwich this generously makes it look even more appealing and provides a rich burst of flavor with every bite. It’s a feast for the eyes as well!

Step 17

Step 18

This sandwich was made for a picnic last time. Personally, I find that spreading strawberry jam on the cheese tastes better and pairs more harmoniously with the egg potato salad than a ham and cheese combination. Feel free to customize it to your liking!
