Sandwich Ingredients

  • 6 slices of bread
  • 4 large cabbage leaves (approx. 1/4 of a medium cabbage)
  • 100g canned corn kernels
  • 1/2 medium carrot
  • 5 large eggs
  • 2/3 teaspoon salt
  • Pinch of black pepper
  • Cooking oil or butter, as needed

Sandwich Seasoning & Sauce

  • Mayonnaise, to taste
  • Ketchup, to taste

Cooking Instructions

First, drain the canned corn kernels thoroughly using a sieve. Ensure all excess water is removed to prevent the sandwich from becoming soggy.

Wash the carrot and cabbage leaves. Finely julienne (cut into thin strips) both the carrot and the cabbage. You can adjust the thickness of the strips to your preference, but very thick strips might take longer to cook.

In a large bowl, whisk the 5 eggs until well beaten. Add the julienned cabbage, carrot, and the drained corn kernels to the bowl. Season with 2/3 teaspoon of salt and a pinch of black pepper. Mix everything together until well combined. This mixture will form the filling for your sandwich.

Heat a frying pan over medium heat and add a generous amount of cooking oil. Ladle portions of the egg and vegetable mixture into the pan, forming round, flat patties, similar to small pancakes. Cook each side for about 2-3 minutes until golden brown and cooked through. You should aim to make 3-4 such patties.

Now, let’s prepare the bread. In a separate pan, melt some butter and toast the 6 slices of bread until they are golden brown and slightly crispy on both sides. If you don’t have butter, you can toast the bread in a dry pan. Crispy bread adds a delightful texture to the sandwich.

Spread a thin layer of mayonnaise on one side of each toasted bread slice. Carefully place a cooked egg and vegetable patty on top of the mayonnaise. Trim the patty to fit the size of the bread if necessary. Drizzle some ketchup over the egg patty. Top with another slice of toasted bread. Wrap the assembled sandwich tightly in plastic wrap. Letting it sit wrapped for about 10 minutes will help the layers meld together and make it easier to cut. Once rested, unwrap and slice the sandwich into your desired portions to enjoy.
