Bread and Filling Ingredients
  • 4 slices of white bread or whole wheat bread (choose according to your preference)
  • 60g onion (approx. 1/4 medium onion)
  • 480g potatoes (approx. 2-3 medium potatoes)
  • 60g raisins (approx. 1/2 cup)
  • 1/4 cucumber
  • 2-3 imitation crab sticks (surimi)
  • 2 slices of cheese
  • 2-3 lettuce leaves (Romaine or Iceberg)

Seasoning and Condiments
  • Mustard sauce (optional, for spreading on bread or mixing into salad)
  • 10 tablespoons mayonnaise
  • Pinch of salt (for flavor, also used when soaking onion)
  • Pinch of black pepper

Cooking Instructions

Step 1

Finely dice the onion and soak it in cold water for about 10 minutes to remove its sharp pungency. Adding 1/2 teaspoon of salt to the water can enhance the onion’s sweetness. After draining, squeeze the onion thoroughly by hand to remove excess moisture, then spread it out slightly to let it air dry. This step helps prevent the sandwich from becoming soggy and preserves a crisp texture.

Step 2

Wash the cucumber thoroughly using coarse salt, scrubbing the skin. Then, cut it in half lengthwise and thinly slice it using a vegetable peeler or mandoline. Thinly sliced cucumber will provide a pleasant texture within the sandwich.

Step 3

Peel and cook the potatoes by boiling or steaming until tender. While the cooked potatoes are still warm, mash them finely with a fork or potato masher. In the mashed potatoes, add 10 tablespoons of mayonnaise, a pinch of salt, and a pinch of black pepper. Mix well to create the base seasoning for your potato salad.

Step 4

Rinse the raisins briefly in cold water and pat them dry. Finely chop the raisins with a knife. Shred the imitation crab sticks with your fingers. Add the chopped onion, shredded crab sticks, and chopped raisins to the mashed potato mixture. Mix everything thoroughly once more. Adjust the final seasoning with salt and pepper. The raisins add a touch of sweetness, and the crab sticks contribute a soft texture.

Step 5

Lightly toast the bread slices in a toaster or on a dry frying pan until golden brown on both sides. Toasting the bread makes the sandwich crispier and helps prevent it from becoming soggy from the filling’s moisture.

Step 6

You’ll need two slices of bread per sandwich. Spread a thin layer of mustard sauce on one side of a toasted bread slice. Mustard adds depth of flavor to the sandwich and helps balance the richness of the potato salad.

Step 7

Generously spread the prepared potato salad mixture onto the bread slice with the mustard sauce. Use a spoon or spatula to spread it evenly across the entire surface of the bread. A generous filling makes for a more delicious sandwich.

Step 8

Arrange the thinly sliced cucumber over the potato salad, followed by a slice of cheese on top. The cheese enhances the overall flavor, complementing the potato salad and cucumber.

Step 9

Finally, add fresh lettuce leaves (Romaine or Iceberg) on top. The greens provide a refreshing crunch and crispness to the sandwich. Now, place the other slice of bread on top to complete the sandwich. Cut in half and enjoy your delicious creation!
